Cooking Wine?

Original post by Kimbalina

Silly questions... what kind of wine do you use when a receipe calls for a cup of red cooking wine or dry cooking wine...etc-?

Is it what ever kinds of wine you have that you would drink.. or is there some kind of brand?

Re: Cooking Wine?

This was a great post. I love to cook, but have always feared cookign with wine b/c 1) I don't drink wine and 2) I had it in a dish once and I didn't care for the taste of it.

This post makes me want to try and cook with it.

Ok thanks Dana... can you tell me what a good dry white wine would be?

I like to use pinot grigio.

I have a bottle of this at home from a christmas gift.. and I haven't opened it yet!

Thanks!

Just remember to drink some while you're cooking

Hey I forgot to respond to your other questions....for the Chicken Franchaise...any white is fine! Or I think you can buy 'cooking wine' in salad dressing aisle.

I cook w/ one that u can drink b/c A) I WANT to drink it and B) the flavor intensifys when it cooks. Those 'cooking wines' in the supermarket are mostly sodium anyway. Yucky!

It doesnt have to be an expensive one..like a Beringers would be fine. I buy the 4 pack of the Beringers Pino Grigio 7 oz bottles to keep on hand for cooking.

Re: Cooking Wine?

Fetzers Merlot is good to cook with, I am not a red wine drinker but I do like cooking with it and this one isnt pricey

Definately use a drinking wine for your recipes the taste will be better. If you are a non-drinker you can freeze the remaining wine in ice cube trays and then put the cubes in a freezer bag to keep for future use. I do that with reds b/c I only drink white wine.
You can buy a good Marsala wine in a liquor store that will taste better than the supermarket sells.

I cook with wine all the time. It's so simple to brown chicken, or veal or beef and then remove the meat .. add wine and broth to the pan, scrape the bits up, and add a pat of butter and some cornstarch to thicken and you have a delicious gravy.

Happy Cooking!

You want to cook with something that you like because when you cook it reduces and tastes stronger.

For a white cooking wine, I usually do pinot grigio because it's crisp but not as sharp as chardonnay. For red, I usually use cabernet sauvignon. I like Barefoot wines-$6 a bottle and they taste pretty good. FM me if you want recipes.
