This is one of my favorite pasta dishesPenne with Sausage, articokes, and asparagus
Ingredients
3/4 cup drained oil packed sun dried tomatoes, sliced, 2 tablespoons of oil reserved
1 pound hot italian sausage
2 (8oz) packages frozen articoke hearts
1 cup asparagus, trimmed and cut in 1 inch pieces
2 large garlic cloves, chopped
1/2 cup dry white wine
12 ounces penne or other tubular pasta
1/2 cup shredded Parmesan cheese
1/3 cup chopped fesh basil
1/4 cup chopped fresh parsley
8 oz fresh mozzarella, cubed (optional)
salt and freshly ground pepper
Directions
Heat reserved from tomoatoes in a large, heavy frying pan over medium-high heat. Add the sausage and cook until browned, beaking up the meat into bite size pieces with a fork, about 8 minutes. Use a slotted sppon to transfer to a bowl. Add the articokes, asparagus, and garlic to the same skillet, and suate over medium heat until the garlic is tender, about 2 minutes. Add the broth, wine, and sun dried tomatoes. Boil over medium heat until the sauce reduces slightly, sirring occasionally, about 8 minutes.
Meanwhile, bring a large pot of salted water to a boil. Cook the pasta in boiling water until tender but still firm to the bite, stirring often, about 10 minutes. Drain the pasta.
Add the pasta, sausage, 1/2 cup of parmesan cheese, basil, and parsley to the articopke mixture. Toss until the sauce is almost absorbed by the pasta. Stir in the mozzarellsa, if using. Season to taste with salt and pepper. Serve, passing additional parmesan cheese.

This is Grandma Rella's famous baked ziti recipe FROM Italy. This is my FIL's mother who is from Bari and this recipe is the shiiiiit.
and NOT hard!Baked Ziti
-1 lb. pasta
-1/2 lb. mortadella (ask for it thinly sliced at any butcher)
-1/2 lb. ham (same thing - thinly sliced)
-1 lb. mozzarella cheese (in a block - fresh)
-3.5 cups grated parmasean cheese
-Equivilent of 1 jar of meat sauce -- we don't buy sauce in the jar, we make fresh but you can buy a good sauce and it is the same difference. i have had it both ways (when i'm lazy).
cube everything first -- cube mortadella, ham and mozzarella cheese. that way, you are all set.
cook pasta - when done and strained mix in a little bit of sauce so that the pasta doesn't stick together. i would say about 1/2 cup to 1 cup of sauce - depending on how much you like. i'm not a sauce person so i put a small amount.
in a standard lasagna pan (about 13x9) put half of the pasta in the pan - nice and flat in order to layer, then put all of the cold cuts (spread evenly), and the first 1/2 lb of the mozzarella cheese - evenly spread.
sprinkle three cups of the grated cheese -- evenly -- it should be a thin film of grated cheese.
then, add the rest of the pasta on top of that! top off with the rest of the mozzarella (so, the other half pound) and half a cup of the parm grated cheese -- all evenly distributed. you can add some extra sauce at this point - it depends on how much sauce you want. i usually don't put anymore on it -- just the bit in the beginning to keep it from sticking. what i do is i save the rest of the sauce on the SIDE and people spoon it on when they eat it. b/c i'm really not a sauce person. i also like to have some shredded mozzarella (the kind in the bag - easy enough) for the end to sprinkle on top... the more cheese, the better!
bake at 350 degrees for about 30 minutes -- at the end, i switch it over to broil (a feature on your oven) for about the last 5/6 minutes to get those golden brown crispy edges and top!!!!
my husband wants me to add that, when you buy your coldcuts, buy the boars' head brand he is a stickler about this one part.

Well I know a simple dish that takes only a few mins and taste amazing...What you need is the following....
Pasta/ Ravioli/ rice
minced crab meat (artificial works just fine too)ps. I haven't done this with raw crab meat.
butter (margin if you prefer)
can of cream of mushroom soup
Alfredo sauce
A veggie of your choice, broccoli, spinach work really good with this dish.
Take butter put in pan until metaled, add crab meat until cooked or reheated. (after the meat is ready, add veggies if you desire. Wait for them to be warm then to go the next step) Then add the cream of mushroom and alfedo sauce. Wait until heated (veggies are fully cooked,) add spices to liking. ( I usually use garlic and basil) Then serve on top of pasta, rice, or Ravioli. Its really good. People have asked if I got this sauce from a restaurant.
