In college my suitemate used to make stuffed peppers for the sisterhood dinners and she always kept some for DH, since he was always over. HE LOVED THEM!!! He keeps asking me if I can make them but I lost touch with her and don't have the recipe. Anyone have a recipe for stuffed peppers. I was hoping we would get one in the book but it didn't show up.

Re: Stuffed Peppers???
Shoot I don't know where i put it!
We used ground turkey meat, zuchinni, peppers , onions, mozzarella as our stuffing.
We browned the meat and drained it poured a can of crushed tomatoes on it and added the veggies! SO easy!

Re: Stuffed Peppers???
I will ask my friend when she returns from vacation, I have made her recipe a few times and it is great. I know that when you mix ground beef, ground pork, and ground veal (like the meatloaf mix) together it has really interesting flavors. I also put sauteed onions in, for a sweetness.

Re: Stuffed Peppers???
Ingredients: 3 or 4 large green bell peppers 1 and 1/2 pounds check chopped meat 2 eggs 1 cup of cooked white rice Salt and pepper Large can of tomato sauce
Steps: Put meat in a bowl. Add the eggs, rice, salt and pepper.
Cut the tops of the peppers off and clean out all the seeds and wash them.
Take the meat and stuff each pepper.
Put the peppers and the large can of tomato sauce into a pot. Cook until it comes to a boil; lower the heat to medium and let it cook for about an hour.
Occassionally mix the sauce so it doesn't burn.
We've served the peppers with mashed potoates, potato salad or any side dish you prefer.

Re: Stuffed Peppers???
I use ground turkey, and grate garlic & onion into it w/ some Italian seasonings, basil, oregano, parsley, black pepper, salt, some crushed red pepper. That is the stuffed part. You just clean out the middle of the peppers. I serve with tomato sauce, and brown rice.

Re: Stuffed Peppers???
Brown lean ground beef with onion & garlic then i add salt pepper cooked white rice, cooked marinara sauce parmesan cheese & oregano parsley. mix that all up in a bowl. It should have a semi-thick consistency so only use a small amount of sauce.
Cut red green or yellow peppers in half (after you wash them) clean the inside, then fill with the stuffing. Put them in a pan fill the pan with water until pepper is covered only half way & drizzle olive oil on top of each pepper & in the water. Bake for 35 min (or until pepper is soft) on 350.
