I liked the royalton in Roslyn, didn't fit our size party well, but very much like what you are describing.

I haven't attended a wedding there, although I will in June--mine! We tasted a bunch of the appetizers when we toured, as there was a reception about to start. They were very tasty--we wouldn't have booked no matter how much we loved the place if the food had been blah. Neil, the manager we spoke to, told us that all the food for the Bourne Mansion and other close Lessing halls come from the Timber Point kitchens, made by the Timber Point chef, so you're actually getting a great deal. Maybe the food isn't quite as fancy as the Bourne Mansion food--although you can work with their menu, we haven't gotten to that point yet--but you'll get the same expertise making the food.
I love Timber Point. I love the old mansion ambiance--we really wanted to avoid the sorts of reception halls that look like jumped-up diners with lots of smoked glass, marble, gilt, and huge velvet swagged curtains. Not our style at all. Timber Point isn't incredibly formal, but we didn't want a very formal wedding. As I'm sure you saw, the dance floor is off to the side, but I rather liked that--not everyone wants to dance, and those who don't, who want to talk, can do so without feeling odd. And we're having a small wedding of 85 people so there will be plenty of room.
And--the prices are quite reasonable, especially if you talk them down.
We also looked at the Three Village Inn in Stony Brook. I've eaten there many times so I know the food is good. We didn't choose it as we want to get married on site and I didn't like either of their ceremony options; also, some parts were a little run-down. And, if you have the cocktail hour outiside, it's held in a long, narrow area with the road running right on the other side of a hedge. At Timber Point the outdoor cocktail hour is held on their patio overlooking the golf course with the Great South Bay in the near distance. But the 3VI is still a lovely place, their catering manager Chrissy seems like a great person to work with, the prices are reasonable, and the food is yummy. Definitely worth looking at. Also they have several fireplaces around the inn--I just went to Brunch with Santa there on Christmas Eve and all the fireplaces were lit and looked beautiful.

Definitely the Royalton. They have a few fireplaces and a living room area for cocktails. A mahogany bar. I am a little partial but go to the website and def go and visit.
