What about Koenigs in Floral Park? I believe they have a kosher menu and their food is unreal.
There is Chosen Garden in Forest Hills, Chosen Village in Great Neck or Chosen Island in Lawrence ( I think). They all have really good kosher chinese food, and I know that they open after shabbos ends. The only thing is that Shabbos ends really late during the summer, so if you are going to a shomer shabbos restaurant, you aren't going to be eating until like 10:00! They usually open an hour and a half after shabbos ends.
