My colors are all so dark that the whiter cakes I'm afraid will look out of place........

You could have them put a bit of tint in the frosting/fondant, so it isn't pure white - you probably do want some lighter things so everything doesn't have a dark feel, you can cover the whole spectrum from light to dark in your color family

Then don't worry about needing grapes on your cake. What are your colors? Get a cake in darker colors that fit your theme. You don't have to have wine and grapes on absolutely every last thing for your theme to work!

still not feeling the cake choice (The new idea one).

it just seems so 'busy' for a wedding cake. i would lose the leaves on the cake. and maybe just a little less grapes

As a Baker's daughter i can tell you. This one is great. I love how she used the photoshop. The darker grapes really accent the cake. Are you set on Fondant? The fondant could be tinted, or maybe use a chocolate ganache or fudge with the lighter grapes. Basically it's what you want. What are your colors?
