I'm booked for the Bourne Mansion on a SAturday night and I don't remember if I 'had' to guarantee 175 for the night or if we just volunteered that number because I thought we were going to be around 200. Now I'm beating myself up because we're only going to be 150 and I'm thinking I'm going to be paying for 15 plates for no reason. Once you have a guaranteed minimum and it's in the contract, there's really no more negotiating, right? I just hate to pay an extra $2500 for no reason. I just never expected that so many people wouldn't be able to come. Are there any other Bourne brides out there who know that we actually do 'have to' guarantee a certain amount for a Saturday night so I don't beat myself up anymore???? I'm curious to hear what other brides had to guarantee.................

Re: how many guests did you have to guarantee???
We guaranteed 140 because when my sister got married my mom and dad paid for 18 empty seats....We will probably have between 140 and 160....This was for a sunday night in May

I'm not a Bourne bride, but if they want your business they'll renegotiate the contract with you. I thought we were going to have about 150-200 guests at first, but after I put the list together, I could only really guarentee 90. I'm at Leonards of Great Neck and they were so nice and let me renegotiate the contract. We got a smaller, more intimate room. And it's less per person too!
HTH. Good luck.

Also, if you find that you really can't meet your minimum then get them to throw in more stuff! If you're paying the $, they better give you something for it!!! Ask for more food, or a viennese hour, or if you're close but no cigar ask for a chocolate fountain or something. But if you're paying, you better get your moneys worth!

Re: how many guests did you have to guarantee???
We had to guarantee 215 for a Saturday night.
However, I'd check with them on their policies... Flowerfield told us that the minimum actually includes people that you're not paying full price for as well - including children and vendors meals. They also told us that if we don't make the minimum they would negotiate with us in terms of maybe adding an extra cocktail station or something to make up the difference rather than us just paying money for something we're not actually getting.
So, I'd give them a call and see if they're willing to work with you.

Re: how many guests did you have to guarantee???
Flowerfield is 185 but we set up an arrangement to have only 160 at an additional $10 a head. I suggest asking if you can just pay an additional charge per person. An additional $10 a head for you would be $1500 versus $2500. It's worth a shot, you have nothing to lose.
