As far as my planning process goes, I would like to get married next spring. I have been looking at lots of halls already, but I'm not sure if I have seen 'The One' yet. (Some people say I might be too picky).

That's good that you didn;t book yet. You are not being picky, just smart and not rushing into it. Don't go for the first price they give you, try to chew them down!!!! It works, it really does!!!
