i know 99% of you are meat eaters and prob 85% of my guests are as well
I am going to post my sample menu - its not finalized but i want to know if this stuff sounds yummy or not to the avg meat eater.
1) Eggplant Rollatini 2) Pan Seared Seitan over mushroom orzo w/ red wine sauce 3) Rissoto w/butternut squas, parsnips, cranberries & hazelnut
Side items- Broccoli Rabe Roasted Potatoes w/rosemary
I still have a few more to think of.

Numbers 1 and 3 sound delicious since I know what they are and I'm sure number 2 is but what is seitan?

Seitan is a meat substitute made from wheat gluten- it takes the flavor of whatever you want it to be with the right spices- kinda looks like grilled chicken if its done right

Re: my vegetarian menu- tell me what you think
Depending on what Seitan is, I would definitely get the Rollentini. And I love mushrooms and broccoli rabe, so I wouldn't have a problem with the sides. The third entree isn't too appealing to me, but I don't like squash or parsnip. I would be perfectly happy with the rollentini, rabe, and mushrooms. I order that sometimes on my own at dinner at an Italian place, and I eat meat.

Im not a big meat eater. I'm not a vegetarian either... but not far from it.
I like the entree's (mainly the eggplant rollatini). But the sides... you need more... those sides don't do much for me. I'd see those sides and wouldn't want either one. Can you add some sort of potatoes maybe?
For some reason I see a roasted red potato in the mix with the sides??

Re: my vegetarian menu- tell me what you think
i just fixed my OP- it was supposed to be rosemary roasted potatoes not mushrooms- I GOT SHROOMS ON THE BRAIN.
and Seitan is a meat substitute- it takes on the flavors of whatever you cook it with.- like tofu

yes there is a pasta & salad app before-hand
And no meat at all- FH is vegan and I am vegetarian- against our beliefs to eat meat and/or serve it
and BTW....we have the viennese hour as well so whoever doesnt eat can fill up on cotton candy, caramel apples and everything else to rot their teeth!

Re: my vegetarian menu- tell me what you think
also-if you do the dish made with wheat gluten, i would def. explain what it is-celiac disease is becoming more common (or rather the testing is improving so more people find out they have it), and if someone with celiac disease ate this you could have a BIG problem at the wedding from a reaction..

Re: my vegetarian menu- tell me what you think
The risotto sounds good.. I wouldn't eat the rest of the stuff... For me personally it would be hard because I am actually allergic to a lot of vegetables. It is possible to add another pasta dish to the menu? I know it may seem excessive because you are serving it beforehand but I know a lot of grown a$$ adults that just don't like vegetables.. It's sad but true!! If you don't think that is the case with the people at your wedding then I think you would be fine.
