Jenny5150- so cool to walk through the showroom! We dont have the grand chef - I just had some pieces from Fortunoff before i got married. But now i have the henckels 4 star 9 pc block which i got at my shower (which i believe is one of the higher grades made in germany), Sabatier steak knives, and then I also got a crappy Henckels 4 pc with cutting board which isnt as good..the handles are less sturdy, the blades crappy. It's a lower product line, not 4 star.

So i guess i dont need any more knives :(

A friend of mine is a chef and he's the one who told me that the blades Henkels uses are NOT german, the handles may be, but the blades are not, even the higher ends ones aen't. They were at one point, but to cut back on their production price they have it imported from cheaper countries and still pass it off as 'German Made Knives' Just going by what I was told, I've used the classic set of Wustof knives and found I liked them better than the classic set of Henkels I own. I've seen HUGE price differences between the two and I've seen similiar price sets between the two. I cook a LOT and I would prefer to own a set of Wustof.

Sorry you don't agree with my opinion Verdila, but it's just that, an opinion. We can't all agree on everything now can we? Maybe it wasn't the best comparison, I meant that BMW is built & made in Germany and is built to last because of their engineering, my point was just that.

evelyntorres -My brother-in-law is a chef too and he actually prefers Sabatier. I cook alot too and I've heard good things about Wustoff though I only own Henckels & Sabatier. And yes some of Henckels (the lower grade as I talked about in an earlier discussion) are not good quality and are not made in Germany but some of the higher costing product lines like 4, 5 & 7 star I believe are made in Germany and perhaps the reason why they cost more.

I know it was just an opinion and of course we're all entitled to our opinions, I just thought the BMW vs. Toyota was a bit unrealistic. Maybe BMW vs. Cadillac would have been more accurate - but really, again its all about the grade or product line. BMW's make some crappy low level hatchback cars too.

Ok ladies...I was telling my FH about this posting. He wanted to get his say in.


Below are a few basic facts (typed by my FH):

Wustoff and Sabatier are the only two lines that are truly comparable in traditional high end cutlery. Henckles manufactures knives in Germany and abroad but the key to their inferiority is that Henckles no longer 'one piece hot drop forges' even their highest end German products. Forging imparts desirable physical properties to the blade but Henckles forges the bolster and then scinters (welds) the blade and the tang to the bolster.
The comparison on steel in terms of country of origin is somewhat inaccurate as well. German, French and Japanese steel are all more than comparable in quality. The quality of the knife blade exists as much in the steel selected as in the hardeneing and tempering process the factory uses to treat the blade. The high end manufacturers all use custom blends of steel specifically formulated for their particular process.

Also - not to beat a dead horse but isnt the professional S Series & 4 and 5 star Henckels product lines of higher grade than their International or Fine Edge Pro and thus more comparable to Wustof or Sabatier? this is what my brother in law says. (the chef)

So if anyone still cares... if youre going to buy Henckels, then try to get Professional S OR 4 or 5 star henckels (the two men logo) - i have the fine edge pro too (1 man logo) and it ****s compared to the 4 star i have.....but i guess Wustof doesnt have lower lines, but doesnt Sabatier?

Of course Sabatier has lower end lines! The International Series: ProSteel, Precision, and Chef Star. The Professional Series is their high end line.
