Whats Cooking Tonight?

Original post by Latina511

I think I am going to make roasted Chicken in my Rotissere. Don't know what to make on the side...maybe creamed spinach or something.

Re: Whats Cooking Tonight?

stace...the mock mashed potatoes are SO close to tasting like real ones...

we LOVE them...I actually buy 2-3 heads of cauliflower a week...b/c we love it so much

the entire thing is about 200 calories!!!!

2-10oz. pkgs frozen cauliflower or fresh 3/4 head (although I use the whole head)
1tsp chicken bouillion granules ( I don't use this...)
1/4 tsp pepper
1 tsp. minced onion flakes
2 Tbs. butter
2Tbs cream (I used a little bit of skim milk instead)

Preheat oven to 375 Cook cauliflower until very done fall apart fork tender. Drain WELL (if there is too much liquid it will not taste as good) and mix cauliflower with all other ingredients except the cream. Using a hand mixer or a food processor
You must be careful adding liquid Don't get it too moist.
Spray an ovenproof dish with cooking spray and put mixture in it. Add pats of extra butter on top if you like an extra buttery potato and a bit of paprika sprinkled on top adds nice color as well
Bake 15-20 min. until hot.
For those of you who think they would not like this dish because they are not fans of cauliflower I implore you to try it. you'll be hard pressed to tell it from mashed potatoes!!!

Re: Whats Cooking Tonight?

I made mock mashed potatoes last week for the first time! Yummy!

My recipe is a little different...it has shredded cheese and sour cream. I'm going to try this one too!
