Veg meal ideas!

Hey ladies. I am having my girls over Sat for dinner. I have some vegetarian friends. I used to be a vegetarian too, but am getting stumped on what to make, since Im soo used to making meat dishes for my carnivore hubby!

I was thinking maybe veggie chili...or chicken and veggie tacos so everyone can be happy. Any good ideas? TIA!!

Build-your-own tacos are always a crowd-pleaser.

Homemade pizzas

Veg chili is great too, with a salad and tortilla chips on the side

Veggie lasagna or baked ziti

That's what I was going to recommend. That way you could have meat for those that will eat it, and those that don't want to, don't have to

Pasta dishes are always good for vegetarians too. Eggplant parm, pasta primavera, etc.

My favorite veggie meals are vegetable fajitas (i make onions and peppers and mushrooms cooked up and then for toppings i make beans and guacamole and salsa and olives and cheese) and then spanish rice as a side. I also like eggplant parm. I also like pasta dishes like penne alla vodka.

I don't eat meat. Usually where ever I go I end up with some sort of pasta since it's an easy find. Tacos are a great idea bec you can make meat on the side and they can choose what they want. I really like that idea. Maybe have black beans and guac for the veggie ppl.

Thank you girls. Keep them coming. Im definitely thinking about the tacos. I also love fajitas and make some kick asss ones! Mexican seems the way to go and Im making Margaritas too so it's perfect!

Vegetarian here and I love veggie burritos. Whole grain warp filled with beans, cheese, brown rice,avocado, peppers, tomatoes etc etc. essentially whatever you want.
Also, I like egg white omelette's with spinach or some other veggie inside.
Vegetable soup
Anything pasta sans meat.
