I add spices to the sauce...and then mix the meat in the sauce......if you are doing a slow cook sauce...you could cook the meat in the sauce...and it would probably soak up the spices a bit more...If you don't want to use a jar - you can start with a can of crushed tomatoes and then spice to your tasting...add garlic, onions, oregano, basil, etc etc

DH won't eat anything but plain Ragu on his noodles! If I let him he'd probably use ketchup!!!!!I love a nice homemade sauce, but siunce he doesn't like the consistancy, ie lumps and bumps of tomato, I have to have jar
Is there anyway to make a nice, flavorful sauce with meat, without the tomatoes being lumpy?
Please don't laugh.. can I strain it before putting the meat in?

Kate, just use kitchen ready crushed tomato...and puree them again before you use them!

I cook the ziti until it is a few minutes away from being done. Then add sauce, moz, ricotta, and parmesan cheese and mix it all up - no egg. Then I bake it covered with aluminum foil, but take the foil off for the last 10 or 15 mins.Hey, Theresa, any tips on making my own sauce. I really want to try!!

What's the difference between adding an egg or not adding one? Is it just to keep it together better?

you can also sprinkle some breadcrumbs and/or parm cheese on top to give it that crunchy top...I use egg for the ricotta...but I don't know why...i just have always done it...lol

I use egg in mine too. I mix together 1 egg, ricotta, paremsan cheese, salt, pepper, mozzerella cubed, and sauce. I precook the ziti noodles til almost done then mix it all together and top with more mozzerella. Cover and bake. I usually make my own sauce but if I am in a rush I use Prego.Welcome New Vendors
