Re: CARLYLE BRIDE THREAD!!!!
omg - JPCP4806 you are getting married next weekend!!!! You must be so excited! Where are you going on your honeymoon? We have 46 days to go, I can't wait to be married and finished with all of this planning!!! Did you decide what you are going to do about the executive gratuity? I was kind of blown away when I realized how much $ they recommend...
We went to the Carlyle last weekend to select our menu. We chose Filet with merlot reduction sauce, mahi-mahi and LI duck. Did anyone else have the duck? If so, how was it?
Also, I am doing votive placecards, but Sue really pushed back on pre-lighting them. So we decided that once the guests are seated at their tables, the waitstaff will walk around and light the candles. Do you think that takes away from the effect? I was kind of disappointed, but I've already bought all the candles, vellum, etc. so I guess I have to deal.

The Bm told us that for a Friday night wedding you tip the MD $1500 - $1800. I thought that was crazy!!!! I guess that covers everyone??? Maybe the MD is supposed to distribute the $$$ I don't really trust it though.
is this supposed to cover everyone??

Re: CARLYLE BRIDE THREAD!!!!
When we went to select the menu. Sue said the recommended executive gratuity is 2-4% of your total bill. That covers your banquet manager, maitre d, bartenders and bridal attendant. She said if u want, u can tip the bridal attendant separately, just let the maitre d know. the maitre d is supposed to distribute the tips to everyone. The 20% /head is used to cover the waitstaff.

Re: CARLYLE BRIDE THREAD!!!!
In your final 'bill' they will give you a range of 'recommended gratuity' and that goes to the maitre d the night of and is passed out to the following people:
maitre de operations manager (banquet manager) executive chef sous chef table captains ( I think?)
There may be a few others in there. We went right in the middle of that range in terms of dollars.
Separately we tipped the bridal attendant, valets, bartenders, and bathroom attendant.
Girls, you will not be disappointed with the Carlyle, they went above and beyond! I'll write my review once I get my proofs back.
We made a great choice ladies!

Re: CARLYLE BRIDE THREAD!!!!
Here is my cake. I had my florist provide the flowers and the Carlyle decorated it. Inside it was marble with chocolate pudding filling. I only had one bite and it was good. We had the dessert cafe so the cake definitely was not center stage.
just had my brother's wedding there friday night and it was AWESOME... people are still calling about the food, room, viennesse, etc... !

Re: CARLYLE BRIDE THREAD!!!!
They will do whichever way you ask them to - i believe the default was horizontal if you use their table numbers. However, we did our own cards and they put them both ways.
