Chicken Chimichangas -- found a yummy recipe

Anyone have a good recipe? My girlfriends and I are having a little belated Cinco de Mayo get together on Friday, and it's my turn to host!!! Also, any good appetizer idea's are appreciated.

Well, I actually got an awesome recipe from a friend, I made them late Thursday night for Friday's dinner, and they turned out wonderful, and they were pretty simple as well!!

Here is the recipe I used:

1/2 cup chopped onion
1 TBSP Minced Garlic
2 TBSP Olive Oil
1/2 TBSP Chili Powder
2 Cups Salsa
3/4 tsp Ground Cumin
1/2 tsp Cinnamon
Pinch of Salt
2 1/2 cups shredded Chicken
10-12 8 inch Flour Tortillas
1 Cup Canned Refried Beans
olive oil for brushing

-In Large Saucepan saute onion and garlic in oil until tender.
-Stir in chili powder, salsa, cumin, cinnamon, and salt.
-Stir in shredded chicken and allow to cool.
-Working with one tortilla at a time, spoon a TBSP of beans down center of tortilla.
-Top with 2 TBSP of chicken mixture.
-Fold up the bottom, top, and sides of tortilla.
-Secure with toothpicks if necessary.
Place chimichangas in greased 13*9*2 baking pan, seam side down.
-Brush all sides with olive oil for browning.
-Bake in a 450 degree oven for 20-25 minutes, or until golden brown and crisp, turn every 5 minutes.

*** I found shredded chicken in the meat department pre-cooked, and seasoned, it is made by Old El Paso. I also covered with taco cheese the last 5 minutes of baking.
