how to make chicken for dinner
my fh has chicken cutlets defrosting for dinneri am so not in the mood for fried chicken cutlets
anyone have a quick yummy recipe to do with them

Broil or grill 'em and add them to a salad.My FH loves Stove Top stuffing, so I just broil 'em, make some stuffing, add a salad on the side, and TADA... I'm the best thing since sliced bread.

marinate them in 2tbs of oilve oil, squeeze 1/2 lemon for juice, sprinkle on some oregano and a clove of crushed garlic. Marinate in ziplock bag for 1/2 - 1 hour. Grill in pan. Either make rice, baked potato or slice over salad.

I have rolled them with muenster cheese and ham. I have rolled them with mozzerella and apsparagus. Secure with toothpicks and bake with some chicken broth.You can marianade and grill or broil using Italian dressing (creamy or regular), or raspberry vinegarette or bbq sauce....
Grill them and top with choppped tomatoes and red onion.
I also brown chicken pieces in olive oil and then cook with red wine, chopped tomatoes, olives and oregano for about 30 mins.
Those are a few I have off hand...

Grilled with Chinese Plum Sauce. Easy and Yummy. I like to serve it with asparagus and yellow rice.

I pound mine flat, put a piece of ham and swiss on top (or any other meat/cheese combo), roll it up, secure with toothpicks. Roll in flour, then dip in egg, then roll in flour again. Fry on all sides in olive oil (in an oven-proof skillet) until brown. Stick skillet in a 400 degree oven for like 20 minutes. Then I take the cutlets out and deglaze the skillet with some white wine, add some chicken broth and let boil down a little, then squirt in some lemon. There's your sauce!

my husband loves cajun chicken pasta - cut up the chicken cutlets into thin strips, marinate in all different kinds of spices (I love Emeril's Essence), then fry up with mushrooms and peppers. Add heavy cream at the last minute, then pour everything on top of linguini or fettuccini.

my favorite thing is to dip them fully in italian dressing, roll 'em in bread crumbs and then bake for like 20 minutes on 350. bake time depends on how thick they are. yummy, yummy!

I recently sauteed thin chick cutlets in Swansons chicken broth and olive oil, seasoned with salt and pepper and parsley before I started. Very light and easy.

balsamic vinegar and bread crumbs..its quick and tasty. if i can do it, anyone can.ps: that's the only thing i know how to make. don't start asking for cookie or pie receipes!!

I don't have a recipe per say....but her it goes.(you can also use chicken pieces)
Grill your chicken cutlets with a little bit of oil. Just enough to brown them not cook them. Remove Chicken
Add 1/2 stick of butter. Deglaze your pan with 1 cup redwine vinegar and reduce to a simmer. Add 1 can of chicken broth. Add about 1-2 cups of fresh chopped tomatoes, 3 or 4 garlic cloves, 1 basil leaf, and 1bay leaf and sliced mushrooms. Add chicken pieces and Let simmer for about 20 minutes.
It is soo yummy! DH loves when I make this. I usually make this with chicken pieces. Enjoy!
