Since this get's more traffic than the recipe board ... I thought maybe we could post our favorite healthy, easy to make recipes ... we might just discover a new favoite dish!

They aren't really recipies, just creations...

Perdue italian breaded low fat chicken cutlets w/ turkey bacon, low fat cheese and grilled, sliced mushrooms on top.

I also like to make Turkey Hill Turkey meatballs w/ garlic diced tomatoes and a veggie on the side.

We try to do the no carb thing at dinner.

most of my stuff is creations and not recipes too ... I think the EVERY DAY meals are the most important.


My favorite is :

Marinate for 1/2 hour
2 chicken cutlets in 2 tbs olive oil, 1/2 lemon squeezed, 1 clove of garlic crushed, and about a tsp of oregano.

Grill; serve on a whole wheat roll with lettuce, tomato, etc ...


Also - Greek Spinach Rice
Sautee 1 medium onions in 3 tbs olive oil, add 1 cup white rice and sautee, add 2 cups water and full bag of finely chopped baby spinach ... cook/simmer until rice is tender
