Fondue Recipes
Hi Girls!!I wanted to make some appetizers in a fondue pot - like chicken or meat.
Any suggestions on what to do?

1/2 pound imported Swiss cheese, shredded1/2 pound Gruyere cheese, shredded
2 tablespoons cornstarch
1 garlic clove, peeled
1 cup dry white wine
1 tablespoon lemon juice
1 tablespoon cherry brandy, such as kirsch
1/2 teaspoon dry mustard
Pinch nutmeg
In a small bowl, coat the cheeses with cornstarch and set aside. Rub the inside of the ceramic fondue pot with the garlic, then discard. Over medium heat, add the wine and lemon juice and bring to a gentle simmer. Gradually stir the cheese into the simmering liquid. Melting the cheese gradually encourages a smooth fondue. Once smooth, stir in cherry brandy, mustard and nutmeg.
Arrange an assortment of bite-sized dipping foods on a lazy Susan around fondue pot. Serve with chunks of French and pumpernickel breads. Some other suggestions are Granny Smith apples and blanched vegetables such as broccoli, cauliflower, carrots and asparagus. Spear with fondue forks or wooden skewers, dip, swirl and enjoy!

1 cup olive oil8 cups white mushrooms, quartered
1 white onion, diced
1 tablespoon chopped garlic
2 cups chicken broth
2 cups cream
8 cups chopped spinach
1 cup shredded Parmesan
1/2 cup chopped tarragon
1/4 cup sherry vinegar
Salt and freshly ground black pepper
Heat 1/2 cup of the olive oil in a large saute pan over medium-high heat. When the oil is hot, add the mushrooms and cook until they start to brown. Make sure not to crowd the pan or the mushrooms will steam instead of searing. Remove from the pan and set aside.
Turn the pan to medium heat and add the remaining 1/2 cup of the olive oil, onions and garlic and saute for about 10 minutes. Add the chicken broth and reduce by half. Add the cream and reduce by half. Add the rest of the ingredients, simmer for 10 minutes and season with salt and pepper, to taste.
Pour mixture into a fondue pot. Surround with the seared mushrooms. Dip the mushrooms into the mixture. Serve immediately.

I went to a bar in the city and ordered a cheese fondue dish to share with a friend and it was really good. It was a mixture of swiss and other white cheese, and we dipped apples-green apples, bread, and I think it was chicken in their. very good, especially the apples.

You can make Fillet mignon fondue.I made this for NYE and my guests wanted to know when we could do this again...lol. DH and I make this from time to time.
All you need is beef broth - (we use low sodium broth) You boil the broth then pour it into the fondue pot and you are ready to cook.
I get fillet tip. Then cut it into cubes.
I make a few dips but you can make ANY kind of sauces you like.
Depending on how many people you have the porportions vary so I will just give you ingrediants - you need to really do it to taste:
These came from an old fondue book:
Mustard Sauce:
Mayonaise (equal amount to the sour cream)
Sour cream
Lemon Juice
Dijon mustard
Chives
Curry Sauce:
Same equal parts of Mayo and Sour cream
Lemon Juice
Curry Powder (to taste)
Wine sauce:
Red wine
Beef Broth (you can use just a little from the broth you are heating to cook the meat)
Shallots
small amount of flour to thicken the sauce
No name but people seem to like this the best?)
Mayo
Ketchup (you can use low carb it doesn't change the taste)
Worcestershire sauce
onion
I usually serve this with a salad, and french bread
This is great to do with one other couple and I usually serve it with red wine. So far it has been a HUGE hit with friends
