Re: Post your healthy dinner ideas here!
not one person has a healthy dinner idea? LOL
well i guess i'll go to the recipes board... thanks anyway ladies . . .
Oh, just to be a good sport, here's my yummy really healthy dinner idea:
Chicken and Veggie Stir Fry
spray large skillet with PAM (or lightly coat with olive or canola oil) . . . toss in chicken breast cut in 1-2 inch pieces. When the chicken whitens, remove, and toss in a couple of chopped garlic cloves and a bag of frozen stir fry veggies (or you can mix it up and add whatever fresh veggies you like). Pour in a can of fat free chicken broth, add pepper, oregano, basil and/or thyme to taste. Put chicken back into the pot and cook about 5 minutes or until chicken is thoroughly cooked.
Serve over brown rice. IT'S SOOOOOOO GOOD.

This is really fast! Turkey Meatloaf 1 lb. ground turkey 1/2 jar salsa (I use about 1 cup) 3/4 cup oatmeal 1 egg white
Mix all ingredients together and put in a loaf pan. Bake at 350 degrees for 45-50 minutes. The salsa keeps it moist and adds veggies that you don't have to chop. We love it!
