"Adobe Photoshop Classroom in a Book" was what was used for the class I took on it. I thought it was really good b/c it gave a bunch of step by step lessons with a CD. I used it back with 5.5 but they have a 7.0 now.

I use this to teach my HS compt art class...
when I was taught we used the Visual Quickstart guides, which were also good...
the library actually has a ton of photoshop books, so it is a great place to look for one you like!
