matzo bri is my absolute favorite part of Passover! I LOVE IT!!!!!! my DH (who is Catholic) keeps asking when I'm going to make some.

I make it the sweet way, and I know there are 1000's of ways to make it!

1/2 a box of matzo (I only buy Streits) crushed
let it soak in water until it softens, then strain out the water
1 egg
cinnamon (to taste)
sugar (to taste)
raisins (and lots of them!)

mix it all up in a bowl. I use a 12" frying so I can make several at a time. I spray it with cooking spray. I use a large metal spoon to gauge the size of the patties.

I usually eat them with apple sauce but like them with strawberry jam too!

I love eating it that way too!

when we lived in Israel, we put chocolate spread on it. I wuldn't dream of doing that now. so fattening!

Now this may be a very innappropriate thing to be public about but the people in our culture are typically known for having sensitive digestive issues. Tell me, what cruel joke G-d is playing on us by making us eat cardboard for 8 days? Wasn't slavery in Egypt enough?

OMG - Totally agree!!!! It's like having cement in your stomach for 8 days!!!! (sorry if TMI!)

Sounds delish!!!! I usually pour a ton of sugar on top... although lately I can't tolerate too much sugar, so I've cut alot of it out.

Dina - how long did you live in Israel? I was there about 13 years ago, loved it so much and so wanted to go live there for a year or two. I hope to go back one day.

I lived there for 10 yrs. I guess you can say I grew up there. lived there from when I was 2 through 12. I have not been back since, but would love to! I have a ton of family there who I haven't seen since I was a kid

I love Matzo with Peanut Butter....I also love the way my Italian mother cooks Matzo Bri....

MATZAH CHEESE LASAGNA
(sooo good, you will never miss the pasta)

Preheat oven 350
Prep time: 30 min
Yield: 8
(taken from Matza 101)

SAUCE FROM SCRATCH:
(or buy a large jar of your favorite tomato sauce and save time)

2 TBS Oil
2 MED Onions (finely chopped)
1 Celery Stalk (finely chopped)
6 Garlic Cloves (pressed)
4 CUPS of canned peeled tomatoes
4 CUPS of Tomato Sauce
1/2 CUP Tomato Paste
1 CUP water
2 TBS lemon juice
2 TBS EACH: basil, oregano, fresh or dried,
Salt and pepper to taste

Heat oil over med heat for 30 sec. add onion and celery. Saute until limp and the onion is light brown. Add garlic; saute for 30 sec. Lower heat; add remaining ingredients and let sauce cook for 15 minutes uncovered. Remove from heat.

FILLING:
(use skim products when possible and it will still be amazing)

6 SHEETS of Matza
2 CUPS Cottage Cheese
2 CUPS Ricotta Cheese
2 1/2 CUPS Grated Mozzarella
1 CUP Grated Parmesan
1 Egg
1/8 tsp Nutmeg
1 tsp black pepper
1/4 CUP chopped fresh parsley

Reserve 1/2 C of mozz. cheese & 1/2 C of parm. cheese. Mix all ot the above ingrediendts in bowl, with the exception of Matza. Grease 9 x 13 x 2 deep dish pan and place some tomato mixture on the bottom. Place 2 pcs of matza over the sauce side by side, and top with 1/3 C cheese mixture, and top with 1 cup tomato sauce. Repeat layering and end with tomato sauce. Top with reserved mozz. and parm. cheese. Place in preheated oven for 45 minutes. Let cool for 15 minutes and serve with extra sauce on side. Enjoy!

I make it almost the same way, except I use two eggs, and put salt and pepper on it... my favorite part of Passover too

Also, I make sweet potatoes. Basically, I just boil as many as I need, mash them with butter and suger or honey, and bake (sometimes with marshmellos on the top).
