travel agents/honeymoon ideas/HELP ME - anyone who knows about castles in Ireland or vacationing in Florence!

Hi everyone -
So my fiancee and I really want to do a combo honeymoon - some major touristy stuff and some major relaxation. We have already done the tropical vacations together twice (Jamaica, Bahamas). We want to go to Europe and not a cruise since we have already gone on two and we really want to immerse ourselves in the culture of new countries - not spend a day and get back on the ship - BUT- please don't anyone think I am putting down cruises!! It is still sort of an idea for us since we ADORE cruises - it is just that we want to try something new because we have crusied for our last two vacations and we want to do something different. SO -
We have been thinking that we would do 5 days in Italy (doing all of the major touristy stuff) and then spend the tail end of our honeymoon in a castle somewhere in Ireland. We are planning to go to Florence and travel around that area when in Italy. We will not do Rome since we think Rome deserves its own entire vacation and we think that Florence and the areas around Florence will give us more than enought to tour in five days. SO -

ANY ADVICE? Does anyone know any helpful hints about Florence (any other areas that we have to see while there) or about Ireland and the honeymoon castles I have heard about?

As you can see - I do not really know anything about this except what I have pieced togther in my head and what I have heard from people. I have to get Frohmer's books and read up. Please let me know anything you can - I need the help!! Please pass on any good travel agents you can suggest. Thanks!
