NWR - Lunch menu ideas? My first time = )

NWR - Lunch menu ideas? My first time = )

Hi girls, I know that many of you are creative, so here is my question. I've met a few of the other girls/women in our apt. complex, and I'd like to invite them over for lunch, maybe on a Sat. afternoon. Dilema - what do I serve? Coldcuts and rolls from the deli? That just seems boring. I don't want to get too fancy, but I'd like to do something a little different without making it a dinner type thing.

Any ideas? Thanks so much!!

for lunch...deil sandwiches,cold salads,..mac,pot,chicken and tuna salad,egg salad. We did that for my sisters shower...all finger type foods and ppl loved it! Diff types of breads and rolls.....

Oh salads, yeah that's better! You don't mean have the sandwiches made up in advance, just put out platters of coldcuts to make their own?

That might be good, maybe with a big garden salad too. Thanks!

yes you make bowls of fresh salads....and they serve them self! What we did was this tropical theme so we cut out pineapples (doubles as a serving bowl) and put the chicken/tuna salad in them.

oh yea we also did a garden salad and chicken ceaser salad!

deli stuff is always good, maybe a potluck lunch. that's always fun - good conversation starter (recipe sharing) and lots of good food! you could also order like a platter from somewhere. i always like middle eastern food - hummus, babaganush, all those good things. i'd lean towards the potluck though. have fun!

How about a giant salad with grilled or crispy chicken cutlets. Easy and usually a crowd pleaser! Serve it with pink lemonade (spike it!) and have fresh fruit for dessert. I would so be down with that!

I also think sandwiches are a GREAT idea - but you have to kind of have a pulse on what people like/don't like. Some people LOVE roast beef - while others are only down with poultry. And you may want to make sure you have something for any vegetarians in the crowd.

Another idea would be to just order some take out - chinese or japanese - and then put it out on platters and good plates. All of the look - none of the work!

heh, just thought about something else.

what about mini foods? mini sandwiches (grilled cheese, etc) mini milk shakes, mini bowls of ice cream, things like that.

it's cheap and a lot of fun, plus a lot of the work could be done by buying those appetizer things with the mini eggrolls, etc.

or you could just have an appetizer meal.

There's a deli near me that does a basket of assorted sandwich wraps - roast beef, turkey, grilled veggies, tuna, etc. Not awfully expensive. I had them cut into thirds, they were a big hit with a few different salads (tossed garden salad, cold pasta, etc.)

You can do a Mexican theme! Do a big round platter of cheese, pico de gallo, lettuce, sour cream, ground beef in taco seasoning, beans, etc. served with soft tortillas, tacos and chips. You can also do chicken fajitas with the onions and peppers ready to go. AND you can serve it all with frozen margaritas and margaritas on the rocks. And if you do this, let me know when 'cause I'm coming over!!

Appetizer meal is AWESOME! Do Tapas! And a GIANT pitcher of Sangria.

I forgot that we used to do this all the time when I was living single! And it won't break the bank.

Do a bunch of mini tapas... like a few grilled lamb chops, some chorizo, chips and dip...

so good!

What exactly is tapas? Is it just small portions of anything you want to serve, or is there a definite theme to it?

Traditionally Tapas are kind of like Spanish Appetizers. Like snacks!

Some examples.. mini empanadas, grilled chorizo, garlic shrimp... a small portion of a lot of little things! DELICIOUS!
