Great and Easy Shrimp Creole

Great and Easy Shrimp Creole
Hi ladies. I got this great, easy recipe from the South Beach Diet cookbook. It was so good and so easy to make that I just had to share.2 strips of turkey bacon or canadian bacon, chopped
1 onion, chopped
1/2 green bell pepper, chopped
1 celery, chopped
1 clove of garlic, minced
1 can (16 oz) chopped or diced tomatoes
1 bay leaf
1/2 teaspoon of black pepper
1 teaspoon or Wostershire Sauce
1 teaspoon of hot pepper sauce - or to taste.
1 pound of medium peeled deveined shrimp
cook the bacon in a large skillet - remove from the skillet and drain over a paper towel -
leave the drippings from the bacon in the skillet and add the onion, celery, and pepper. Cook for about 5 mintues until tender.
Stir in the garlic and cook for about 1 more minute.
Add the tomatoes (with the liquid), the bay leaf, the black pepper, wosteshire sauce and hot sauce. Heat to boiling.
Reduce heat and add the shrimp and bacon. Cook for about 10 minutes or until the shrimp are opaque. Remove and discard the bayleaf before serving.
Serve with brown rice.
A few of my own tips:
- a red pepper works just as well as a green pepper.
-get the jar of minced garlic (Polaner makes it). It saves you time and energy, and works just as well.
- sometimes the drippings from the bacon are not enough. You may need to add a little of extra virgin olive oil.
- chop everything ahead of time and have it ready to go - once everything is chopped the dish cooks in about 30 mintues.
-buy the frozen peeled and deveined raw shrimp.
I only use half the bag for me and DH, and then I have the other half left in the freezer for the next time I want to make the meal.
This is an impressive dish - I brought to a pot luck and wowed everyone.
