easy & delicious!

my LORD i've been spending to much time on the BHB & theme boards! i just noticed the newlywed & recipe board this week, and i've been married for almost a year!!! I'm so happy i found this board :) i love to cook! I made this YUMMY recipe tonight for dinner....me & the hubby both LOVED it. It's a LITTLE fattening, but if u use reduced fat for everything it's not so bad...and it's so simple!

Easy Pot Pie Casserole

You'll need:

1/2 Large onion (or 1 small) - chopped

3-4 boneless skinless chix. breast - cubed

1 (10.5oz) Can cream of chix. soup

1/2 Can cream of mushroom soup

1 Cup sour cream

1/2 cup milk

1/2 small box frozen peas

1/2 small bag of baby carrots - sliced

1/2 cup chopped pimiento

1 can of pilsbury 'Grands' (large size) bisquits (i used the 'flaky layer' style)

About a cup(or less-ur choice) of shredded cheddar cheese

**butter for greasing pan, and sauteing onion/carrots

**salt & pepper to taste

1) In frying pan, cook cubed chicken untill cooked thoroughly. set aside

2) Preheat oven to 350. Grease bottom & sides of 11in by 7in baking dish

3) Heat butter in small non-stick skillet over medium heat, saute onion & sliced carrots untill onion is tender.

4) Combine onion, carrots, chicken, soups, sour cream, milk, frozen peas, pimiento, some salt & generous amount of pepper(to ur liking) in mixing bowl..mix well. Spoon mixture into prepared baking dish. Bake for about 25minutes. Remove from oven.

5) Sprinkle baked layer with cheddar cheese. Arrange biscuits in a single layer across the top. Sprinkle bisquits lightly with cheddar.

6) Bake untill Bisquits are golden brown & the sauce is bubbly(about 20 minutes longer). Serve immediately...Enjoy! :)

**tip: if u have more than one rack in ur oven, u may want to lay a piece of tin foil on the rack underneath the baking dish...mine bubbled over a little bit and got the bottom of the oven!
