lots of basil is stuffed between the meat and the skin (and in the cavity).
what a description! this is why i can only buy chicken breast already cut. srry, i get grossed out easily w/ meat/poultry!

Pesto!!! I love to do a simple tomato, prosciutto, and mozzarella panini with it. Yum. I also like to make pizzas with it and some grilled chicken and mozzarella cheese. I've also made this shrimp salad with pesto and it's really good.

ok ladies heres the recipe
chicken breast stuffed with sun dried tomatoes and basil
1/4 cup of oil packed sun dried tomatoes with
1tablespoon oil from the tomatoes
1/4 cup chopped fresh basil leaves
2 tablespoons grated parmesan cheese
4 med chicken breast halves
1/2 teaspoon salt
1 teaspoon coarsely ground black pepper
Preheat oven at 425,
coarsley chop sun dried tomaotes ( i used the pesto so ididnt have to do this)
in small bowl mix basil, tomatoes, parmean and 1/2 tsp pepper
make pocket in meant, stuff eaqually amounts of the mixture to each chicken breast. place chicken breast in a 13x9 backing dish
take the 1tbp of oil from the tomatoes and the salt and remaining pepper and mix togehter, then brush mixture over chicken breast. bake chciken basting occasionally with pan drippings, until juice runs clear or when chicken is no loner pink inside this should take about 35-40minutes

pesto - its soooo easy too and u can freeze it if you have extra - its great on pasta, chicken, or you can even use it as like a condiment
I eyeball the entire recipe but here's a sort-of recipe 1 bunch of basil 1-2 garlic cloves 2 tbsp. pine nuts a handful of grated parmesean cheese (pulse it in a food processor then stream in olive oil, i would say its about a 3/4 - 1 cup

Pesto Pizza Bread
I love to cook. since i met my DH 6 years ago he has gained 40 pounds! Try my basil pizza bread its awesome : )
Pesto: 2 cups fresh basil leaves 1 cup fresh Italian parsley leaves 3/4 cup grated Parmesan or Romano 1/2 cup pine nuts, toasted 6 garlic cloves 1/4 teaspoon salt 1/2 cup olive oil fresh mozzarella sliced tomato 1 baguette
For the pesto, combine all ingredients in a food processor or blender. Puree until the mixture forms a smooth, thick paste. Slice the baguette. Spread pesto mixture over the cut sides of the baguette. Layer the tomato first then the mozarella and toast in the oven until crispy and golden.
