I have tons I can share since I am trying to lose weight. FH doesn't even realize half the time that they are low cal/ low fat. If you really want good recipes, do a search on Cookinglight.com. They have the best recipes, and most of mine are from there!

I just tried it, go to recipe finder and type in an ingredient you want to use, like say chicken, and you get tons of recipes! cookinglight.com

I dont have time right now, but I just wanted to let you know I checked back and I'll post them later tonight or tomorrow.
I also have some really good food substitutions to reduce fat in baking I'll post those too.

Biscotti Di Prato
3 3/4 C all purpose flour (stirred till fluffy before measuring) 2 C sugar 1 tsp double acting baking powder 1/4 tsp salt 4 eggs 2 egg yolks 1 tsp vanilla ( or 1/2 tsp vanilla and 1/2 tsp almond extract if using almonds) 1 2/3 c almonds or hazle nuts coarsley chopped and litely toasted. eggwash
Mix flour, sugar, salt and baking powder. whisk together eggs, yolks and extracts, add eggs, etc to flour mixture and stir until a dough forms (looks like it can never happen... but keep working it...it will. I sometimes add a VERY little sprinkling of water) add nuts, turn out on a non-stick surface ( I use a marble board or my formica rolling board) and knead 3 or 4 times. Divide into fourths and shape each piece into a 11 x 2 in. log ( make it "tall" as they flatten while baking) Place on buttered and floured baking sheets, brush with egg wash (egg yolk whisked with 1 T water). Bake at 350 for 35 min and cool 20 min. Slice 1/2 to 3/4 inch thick. Place on clean baking sheets ( cut side down) and bake 10 or 12 minutes at 275. turn pieces over and bake another 10 minutes. If you want to make them extra fancy, dip half a slice in melted chocolate and sprinkle with finly chopped nuts. You can make bigger 'scottis by making two thicker logs, but be sure to leave room for spread.

Oatmeal Raisin Cookie Bites
3 cups quick-cooking oats 2/3 cup all-purpose flour 2/3 cup sugar 1/3 cup packed brown sugar 1 teaspoon baking powder % teaspoon salt
Egg substitute equivalent to 2 eggs 1/3 cup light corn syrup 1 teaspoon vanilla extract 1 cup (or more if you like) raisins
% teaspoon (or more if you like) ground cinnamon
In a large mixing bowl, combine oats, flour, sugars, and baking powder, cinnamon and salt. Add egg substitute, corn syrup, and vanilla; mix well. Add raisins as desired. Drop by rounded teaspoonfuls onto cookie sheets coated with nonstick cooking spray. Bake at 350* for 10-12 minutes. Yield 2 dozen.
Note: I usually double this recipe and make the cookies double size. To do this, simply increase baking time to 14-16 minutes. Don't overcook these, as they may be too dry, remember there is no oil in this recipe.

Michael's Fudge Brownies
1 cup sifted flour 1/2 cup plus 1/2 tablespoon unsweetened dutch process cocoa 1/4 teaspoon salt 1/4 teaspoon baking powder 5 tablespoons butter or stick margarine 1 1/4 cups sugar 1 egg 2 egg whites 1 teaspoon vanilla extract 1 teaspoon instant espresso or coffee powder, dissolved in 1 teaspoon hot water
Preheat oven to 350 F (325 if using glass pan). Spray 8" square pan with cooking spray.
Stir together flour, cocoa, salt, and baking powder.
Melt butter in a medium saucepan. Remove from heat and stir in sugar until combined (texture will remain sandy). Add the egg, egg whites, vanilla, and dissolved espresso powder. Beat with a wooden spoon about 40 strokes, scraping the sides of the pan as necessary. Add the dry inggredients and beat for another 40 strokes, or just until completely mixed.
Scrape into prepared pan. Spread evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out a little gooey. Cool on a rack. Cut into 16 squares.
Per brownie: 134 calories, 4.6 g fat (29% calories from fat). That is assuming you only eat one brownie. I look at it this way: half the pan is only 36.8 g of fat, which doesn't exceed the recommended daily intake, right?

Low Fat Triple Chocolate Cake bars:
1 3/4 cups reduced fat Bisquick® 1 cup sugar 1/4 cup baking cocoa 1/4 cup egg beaters® 99% egg substitute (or 2 egg whites) 1 cup chocolate skim milk 1 tablespoon vegetable oil 1 teaspoon vanilla 1/4 cup miniature semisweet chocolate chips 2 tablespoons caramel fat-free topping Optional: frozen fat-free whipped topping or vanilla fat-free frozen yogurt
Heat oven to 375º. Spray square pan, 8 x 8 x 2 inches, with cooking spray.
Mix baking mix, sugar and cocoa in large bowl. Mix egg product, milk, oil and vanilla until blended; stir into baking mix mixture. Spread in pan.
Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cook in pan on wire rack 5 minutes. Sprinkle chocolate chips over cake. Drizzle with caramel topping. Serve warm with whipped topping.

Low Fat Peanut Butter Cookie
45 calories and 1.5 grams of fat per serving.
1 can (14 oz.) low fat sweetened condensed milk
3/4 cup reduced fat peanut butter
1/4 cup fat free egg substitute
1 teaspoon vanilla extract
2 1/4 cup reduced fat biscuit mix
1/4 cup sugar
Directions:
Mix the milk, peanut butter, egg substitute and vanilla with a mixer on a low setting until smooth. Add the biscuit mix and blend well. Cover and chill for at least 3 hours.
Preheat your oven to 350. Drop the dough by teaspoonful 2 inches apart on a cookie sheet coated with nonstick spray. Sprinkle with sugar and bake the cookies until lightly browned about 6-8 minutes.

Preheat oven to 375º. Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour, baking soda, and salt. Beat brown sugar, butter, and vanilla extract at medium speed of a mixer until well-blended (about 5 minutes).
Beat egg whites until foamy using clean, dry beaters. Gradually add granulated sugar, 1 tablespoon at a time; beat until soft peaks form. Add corn syrup; beat until stiff peaks form. Fold brown sugar mixture into egg white mixture. Add flour mixture; stir in chocolate chips.
Drop by level tablespoons 1 inch apart onto baking sheets coated with cooking spray. Bake at 375º for 10 minutes or until golden. Remove from oven, and let stand 5 minutes. Remove cookies from pans, and cool on wire racks. Store loosely covered.

Ginger Cookies (and Gingerbread Men) Makes 30 (2 cookies or 1 gingerbread man per serving)
1 cup sugar 1/2 cup unsweetened applesauce 1/4 cup margarine Egg substitute equivalent to 1 egg, or 1 egg, slightly beaten 1/4 cup molasses 3 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon ground cinnamon 1 teaspoon ground ginger Vegetable oil spray
In a large mixing bowl, beat sugar, applesauce, and margarine with a sturdy spoon, then beat in egg substitute and molasses. In another large bowl, sift together remaining ingredients except vegetable oil spray. Add to margarine mixture, stirring well. Cover and refrigerate dough until thoroughly chilled, about 2 hours. Preheat oven to 350 degrees F. Spray baking sheets with vegetable oil spray. Using a teaspoon, drop mounds of dough onto baking sheets, about 1 inch apart. (You'll have about 60 cookies.) Bake for 10 to 12 minutes.
Gingerbread Men
Prepare dough as directed, using 3 1/2 cups flour. Lightly flour a flat surface and roll chilled dough to 1/4 inch thickness. Cut out gingerbread men shapes with a 5-inch cookie cutter. Bake for 10 to 12 minutes at 350 degrees F. Decorate with 1/2 cup Confectioners' Glaze. Makes about 30 gingerbread men.
