Midweek Dinner recipes needed

OK - we've been together (living and functioning) for 2 weeks - so far we've

- gone out
- had grilled chicken over salad
- chicken & vegtable quesadillas

as midweek dinners.

I would love some more quick to prepare midweek ideas, but they have to be healthy too (please)

Thanks

Re: Midweek Dinner recipes needed

I have a great Fresh salsa recipe that i make and i put that over grilled chicken, and you can grill veggies too..

and i also love to go to cooking.com and type in the main ingrediant and then you get a bunch of different recipies..

do you eat steak?

are you looking for really quick meals? do you BBQ?

Re: Midweek Dinner recipes needed

Wow - lots of chicken

Veggie Pizza - the pizza place sells us the dough and cheese ( I know not heatlhy) and then J proceddes to make the best **** pizza in the world - with sauteed vegtables and the cheese(you need to buy a pizza stone for this one).

I make allot of fish and rice - blackened catfish with red rice and beans, Salmon with rice mixed with feta cheese and spinach,(J never ate fish before we moved in together now he loves it)! turkey balls with sauce and a tiny bit of pasta and a big green salad.
Grilled shrimp over greek salad (can you tell I'm into cheese here)? Ommlette night make big fluffy egg white ommlettes with vegtables (mushrooms tomatoes, spinach, peppers, olives) toast up some pita bread a little more dinner like than plain ww toast. I think I have cooked it all if you want some ideas for chicken let me know!

Please let me know if you need the recipe for any of these Im just spouting off ideas for you here .....

Re: Midweek Dinner recipes needed

This isn't super healthy, but it all depends on how much oil you use (I only use a tiny bit):

Stir Fry Fahita Style chicken with frozen veggies (carrots, string beans, onions, bell peppers) and some soy sauce...

Frozen Ravioli

Couscous with Veggies and/or chicken

Fish with rice
