What's the best way to cook steak without a BBQ?

My FH and I don't have any outdoor space in our apartment for a BBQ, so when I cook steak I usually put it in the broiler, but it's hard to get it perfect. Sometimes it gets too dry or just cooks unevenly.

What's the best way to cook steak without having a BBQ? I'm looking for new ideas! I have a big sirloin steak ready to go for tomorrow's dinner.... if anyone has any marinade recipes and/or indoor cooking methods please let me know! Thanks!!

Re: What's the best way to cook steak without a BBQ?

Hmmm...I understand your dilemna b/c we haven't purchased a grill yet, and we have plenty of space! LOL.

I have pan fried steaks before, and they come out delicious if you are patient! Here's some ideas - have fun!

Simple seasoning: season meat w/salt and pepper on both sides and drizzle w/EVOO. PLace steak in very hot pre-heated skillet. DO NOT move or turn the meat for about 8-10 minutes, depending upon thickness. Letting the steak stand in the hot skillet ensures that it will become carmelized, which gives it such great flavor. Turn and do the same on the other side.

Another idea for marinade: this is delicious, but it definitely a stronger 'marinade' taste...mix together olive oil, soy sauce and some Montreal Steak seasoning (in your spice aisle). Let meat marinate for at least 30 min. Then cook in skillet according to directions above.

Enjoy - whichever you decide, I hope it turns out well!

Re: What's the best way to cook steak without a BBQ?

The ideas by the previous girl are great. I just want to add that an iron skillet works best for me. It gets really hot so you need a good potholder and don't forget to turn on your exhaust fan! It can set off your fire alarm, and if it's directly connected to the fire house, you don't want guests.

Other than that, they give you the best steaks.

You can also Broil the steak. I also have a apartment and have no grill, I have been broiling my steaks latley and they turn out better than my stovetop grill

We cook our steaks on the George Forman grill.
We just season it with lots for salt and pepper.

Re: What's the best way to cook steak without a BBQ?

THANKS!

I'm going to try all of your ideas... probably the Montreal Seasoning and the George Foreman grill! I don't have a cast iron pan yet, so that will have to wait until I have my stae-of-the-art gourmet kitchen in my brand new house (whenever and whereever that is! LOL!)

The George Forman Grill also makes the best grill cheese sandwiches.

Re: What's the best way to cook steak without a BBQ?

Just FYI - the cast iron skillet was only a suggestion. For the recipe I posted, you do not 'need' cast iron...I cook steaks in my non-stick alluminum fry pan all the time and they are great.
Good luck!

Edited to add - you can try the Foreman, but I don't recommend it. You cannot get the same 'carmelized' effect with the Foreman, and IMO, that is what give the steak its flavor.

We always use the George Forman Grill to cook our steaks and they come out great.Just don't overcook it. We don't marinate it in anything. We just season it with salt and pepper.

Re: What's the best way to cook steak without a BBQ?

Here's how we make our steaks...you need that cast iron pan for this recipe. Turn on the exhaust fan and have potholders nearby.

We like ribeyes prepared this way. Bring them to room temperature. Brush lightly with canola oil and season with salt and pepper.

Place the cast iron pan in the oven and heat it to 500 degrees.

Once oven reaches 500, remove the pan and place on stovetop over high heat.

Place the steak in the middle of the hot (dry) pan. Cook for 30 seconds without moving. Turn with tongs and cook for another 30 seconds.

Put the pan and steak into the 500 degree oven for 2 minutes, flip with tongs and cook another 2 minutes.

Remove from pan, cover loosely with foil and let rest for a minute or two.

These times are for medium rare 1 to 1 1/2 inch steaks.

Mmmmm....steak....

Re: What's the best way to cook steak without a BBQ?

Just updating you all that I cooked my steak last night on the stove top on a big grill that I have. I used a dry rub of several different spices (chili powder, paprika, cumin, cayenne pepper, to name a few), and cooked it for about 10 minutes on each side, not moving it, unless to flip it over. It came out PERFECT!! We ate the whole thing!

Thanks to you all for your ideas!!!

Re: What's the best way to cook steak without a BBQ?

I usually make steak in a pan on top of the stove. I first saute some half way onions with a little butter or I drizzle some extra virgin olive oil, salt and fresh ground pepper. I also add a touch of red wine if not cognac. I season the steak with salt and pepper to taste, I poke holes on the steak and then add some wine or cognac right over it when its in the pan cooking, also some butter. Cook it well or rare...however you like it.

You can also use was of the grilling pan like the ones used to make pancakes. That works like a grill and it cooks great. Usually I just drizzel some EOO wipe it down a little so its not to oily and just put the steaks right on it when its nice and hot. Salt and pepper to take.
