Here is one for everyone. These are sooo good. Everytime I make them for somewhere people go crazy over them.

Sweet and Sour Meatballs

1 pound ground beef
1 cup soft bread crumbs
1 egg, slightly beaten
2 Tbsp. minced onion
2 Tbsp. milk
1 clove garlic, minced
1/2 tsp. salt
1/8 tsp. pepper
1 Tbsp. vegetable Oil
1 cup Heinz Chili Sauce
1/2 cup grape jelly
1/2 cup currant jelly

Combine first 8 ingredients: form into 40 bite-size meatballs. Cook in oven at 450 degrees for approximately 15 minutes or until done. Combine chili sauce and jellies in a pot on stove. Heat on medium heat, stirring occasionally, until jelly has melted. Pour sauce over meatballs and Enjoy!! Makes forty appetizers.

I recommend doubling or even tripling the sauce amount. I have every time. The extra sauce allows the meatballs to soak in it which captures all the flavor. I usually triple the sauce and double the meatball amount. They go really really fast.

I have a great easy recipe...if you know how to make meatballs.

Equal parts spegetti sauce(no chunky) and cranberry jelly. Combine and heat until the jelly is 'melted'.

Brown the meatballs and add to sauce until finished cooking.

I make a baked calm dip that always gets rave reviews and it is really simple.

2 cans chopped calms
juice of two lemons
1 green pepper chopped
1 medium onion chopped
1 cup breadcrumbs
a few dashes of Tabasco
~1 tablespoon dried oregano
6 to 8 oz shredded cheddar cheese
Favorite Crackers

Combine calms (with their juice) and the juice of the lemon in a medium skillet. Simmer for ~5 minutes and then add green pepper & onion. Simmer until veggies are soft (5 to 10 minutes). Add oregano and remove from heat. Next add breadcrumbs. Spread mixture into a pie dish, top with cheddar cheese and bake in the oven on 350 for ~15 minutes. Serve with crackers.

The dip can be prepared in advance, just top with the cheese and refridgerate.

Here's an easy one that my sil made for last week's bbq

On wooden skewers, thread bocconcini (little mozzarella balls), a basil leaf folded in half, then a cherry tomato. Repeat until you reach the end of the skewer.

If you'd like, you can drizzle with good olive oil and a little balsamic vinegar.

I like to make homemade hummus & baba gannoush (the eggplant spread) and serve with toasted pita wedges and veggies...

for the hummus:

2 cups of chick peas (cooked from can)
1/2 cup lemon
2-3 cloves garlic
1/2 teaspoon of cumin
1/3 cup tahini (ground sesame paste- found near peanut butter)
2 tablespoons of olive oil
salt & pepper to taste

I also add a jalapeno for spicy.. or you can add a roasted red pepper... anything for flavor, But it's perfectly fine without.

garnish with EVOO and paprika and a sprig of flat parsely

Process all of this in a food processor until blended.


for the eggplant...

wash and poke holes in a whole eggplant and roast in oven at 350 degrees for 1 hour

allow to cool.

cut eggplant into cubes and place in food processor.. to this add:

1/3 cup tahini
juice of 2 lemons
1-2 cloves of garlic depending upon how big your eggplant was
salt
1/2 teaspoon of cumin
1/3 cup olive oil
process until all blended.

garnish w. kalamata olives and EVOO

Easiest Appetizer Ever - Cheese Bread

Ingredients:

1 can of refrigerated breadstick dough (plain and 12 breadsticks total)

1 block of havarti cheese (any flavor, but with dill is really yummy)

What to do:

Remove breadsticks from can and lay 6 of them flat. One at a time, weave the other six breadsticks across them, over and under. (Pretend you are making a kindergarten placemat)


Put the cheese in the middle of the square of dough and squish the dough around it, making sure to pinch the sides closed.

Place on a cookie sheet with the seam side down and bake at 350 until the bread is brown and the cheese is melted. 15-20 minutes depending on your oven.

Looks great, smells great and tastes better.

Tips: Put aluminum foil on the cookie sheet to make clean-up easier. You can also brush the dough with egg or milk before you bake it, but you don't have to.
