I LOVE to bake for the holidays! I have sooo many recipes that are all relatively easy to make. I'll post some of them

MINI CHEESECAKE CUPS
(2) 8 oz packages cream cheese
1 tablespoon + a few drops vanilla
2/3 cup sugar
2 eggs
box of Nila wafers
optional: Fruit topping (i usually use cherry or blueberry)

Prehaet oven to 300
Line cupcake pan with liners and put a Nila wafer in the bottom of each. (Makes about 24-recipe says 24, I usually end up with a few less??)
Combine cream cheese and sugar by hand. Add in eggs one at a time-mixing well. Add vanilla.

Fill cupcake liner 2/3 of the way with batter. Bake for 30 min to top VERY slightly brown. Let cool and top with fruit topping.

SURPRISE POPS (Great if you have kids-recipe makes 10)
1/2 cup sugar
1/2 cup brown sugar
1/2 cup butter
1/2 cup smooth peanut butter
1 teaspoon vanilla
1 egg
1 1/2 cups flower
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
10 Milky Way or Snickers snack size
10 popsicle sticks

Preheat oven to 375

Combine the sugars and butter. Beat until fluffy. Add peanut butter, egg and vanilla. Blend well. Add flower, baking soda, baking soda and salt. Bland well. Mixture will become somewhat hard.

Stick the popsicle stick into the end of one of the candy bars long ways. Wrap the mixture around candy bar to make a "popsicle" Bake 13-16 minutes on ungreased cookie sheet. They WILL spread so leave room between them!

WALNUT or PECAN TASSIES
Dough:
1 stick sweet butter, softened
3 oz cream cheese, softened
1 cup flour

Mix butter and cream cheese together until well blended. Gradually add flour and work into a dough. Make 24 little balls of dough. Press evenly into mini-muffin tins. ( i use a tart shaper I got from papered chef to push it down and make a little "cup" for the filling)

Filling:
3/4 cup brown sugar
3/4 cup chopped walnuts or pecans
1 tsp vanilla
1 egg
1 tsp melted butter.

Mix all filling ingredients together by hand. Drop evenly into dough. Bake at 350 for 30 minutes or til goldne brown. Remove from pan and cool. Sprinkle with powdered sugar.

Meringue Cookies

2 egg whites
1/8 tsp salt
1/8 tsp cream of tarter
3/4 cup sugar
1/2 tsp vanilla extract

For filling:
You want the total amount to be about 2 1/4 cups. You can add anything you want. I like just chocolate chips. My mom mixes chococalte chips and peppermint (mostly choc chips with a couple of crushed candy canes). Other people use walnuts. It is all a matter of preference.

Heat oven to 250
Mix egg whites until foamy.
Add salt and cream of tarter. Beat until soft peaks.
Add augar, 1 tbs at a time while blending. Beat until mixture is stiff. Add in whatever you choose for filling and fold in by hand.

Drop by heaping teaspoon onto cookis sheet. Leave a little room for spreading. Bake for 40 minutes. Cool on cookie rack.

This recipe requires a cookie press:

BUTTER COOKIES
Preheat oven to 400

2 1/2 cups flour
1 tsp baking soda
1 tsp cream of tartar
1/2 tsp salt

Sift above ingredients together and set aside.

1 cup butter or margarine (2 sticks)
1 1/2 cups confectioners sugar
1 egg
1 tsp vanilla

Cream butter. Add sugar gradually until fluffy. Add egg and vanilla. Blend. Gradually add dry ingredients. When all blended well use cookie press on ungreased cookie sheet. Bake for 8-10 minutes.

You can add food coloring, sprinkles or other decorations before baking. It depends on what shapes your cookie press has.

Candy Cane Cookies

Preheat oven to 375

1/2 cup butter
1/2 cup shortening
1 cup confectioners sugar
1 egg
1 1/2 tsp almond extract
1 tsp vanilla
2 1/2 cups flour
1 tsp salt

Mix all ingredients together, starting with butter and shortening and continuing in order. When all mixed together seperate into 2 halves. Leave one half plain and mix the other half with 1.2 tsp red food coloring.

To shape into candy canes: Take a tsp of dough from each half and roll into a 4 inch rope. Press dough side by side and twist around each other. Curve top to shape like candy cane. Shape each cookie one at a time. Bake on ungreased cookie sheet for about 9 minutes. (Until white parts just starts to brown)

Snowballs

1 stick butter
3 tbs confectionary sugar
1 cup flour
1 cup chopped walnutes

Combine butter and sugar. Add flour and nuts. Refrigerate over night.

Preheat oven to 325. Mkae little balls of dough and bake on cookie sheet 10-15 minutes until light brown. Let cool a little bit and roll in confectionary sugar. (you will know if cookies are too hot because sugar will start to melt)

THUMBPRINT COOKIES

1/4 cup butter
1/4 cup shortening
1/4 cup packed brown sugar
1 egg, seperated
1/2 tsp vanilla
1 cup all purpose flour
1/2 tsp salt
3/4 cup finely chooped nuts (i use almonds)
raspberry jam

Heat oven to 350
Mix together butter, shortening, sugar egg yolk vanilla. When that is well blended gradually wprk in flour and salt until dough holds its shape.

Shape dough into 1 inch balls
Beat the eff white slightly, dip each ball into the egg white and then roll in nuts. Place 1 into apart on ungreased cookie cheet. Press your tumb in the center of each cookie. Bake 10 minutes or until light brown. Immediatley remove from cookie sheet (gently). Fill the center thumbprint with jam.

My anytime favourite cookie

chocolate, oatmeal , raisin, & nuts!!

CHOCOLATE CHIP-OATMEAL COOKIES WITH NUTS AND RAISINS

10 tablespoons (1 1/4 sticks) unsalted butter, room temperature
6 tablespoons solid vegetable shortening
1 cup (packed) golden brown sugar
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
2 cups old-fashioned oats
1 1/2 cups semisweet chocolate chips (about 9 ounces)
1/2 cup chopped walnuts
1/2 cup raisins

Nonstick vegetable oil spray

Preheat oven to 350°F. Using electric mixer, beat butter, shortening, both sugars, eggs and vanilla in large bowl until well blended. Sift in flour, baking soda and salt; beat to blend. Mix in oats, chocolate chips, nuts and raisins.

Spray baking sheets with nonstick spray. For each cookie, drop 1 rounded tablespoonful of dough onto sheet, spacing 1 inch apart (do not flatten dough). Bake cookies until golden but still slightly soft to touch, about 15 minutes. Cool cookies on sheets. (Can be prepared 1 day ahead. Store airtight at room temperature.)

Makes about 3 1/2 dozen.
