Re: I have Chicken Cutlets defrosting!

I make chicken bruschetta once in a while and it's really good. I seed and chop some roma tomatoes, as well as onion and garlic, and put it in a strainer with a good amount of salt (to get the juice out of the tomato) and pepper and a ton of basil. I let that sit for a while to drain. In the meantime, I cook the chicken cutlets in a pan with some Pam and seasoning. Finally, I put the chicken on a baking sheet, put a generous amount of the bruschetta (which is even better if it was made the day before) on top and a little bit of mozzarella cheese and stick it under the broiler to melt the cheese and get it just a little brown and bubbly. I serve it with veggies and a nice focaccia bread with a little flavored olive oil.

Re: I have Chicken Cutlets defrosting!

I make chicken with roasted red peppers it takes aobut 5 minuets to prep and about 30 min to cook.

I cute the chicken in cubes and then pan fry it with just a little pam until brown. Mix in same pot 2 cans of cream of chicken soup and 2 cans of milk then cut roasted red pepers in the jar in small squares and then about 5 min, before you serve you toss in the red peppers and serve I made it for my eparty and everyone raved about it and also this is my fiance's favorite dish and he is a picky eater. Make sure when you pan fry the chicken to go it until it is golden brown and all the way cooked. Also season it with salt and pepper.
If you need more info FM me.
