does this sound like trouble?
so i found a few recipes for french fries without a deep frier. BUT, they call for 4 inches of oil on the stove. AND, they are suggest using a 'fry thermometer' - which I don't have.Part of me is inclined to just boil 4 inches of oil in a pot.
The other part of me thinks the fire department will have to get involved.
Thoughts?!

You could make (what I call) baked french fries. Just boil potatoes, cut them into slices, put a bit of oil and spices on them, and pop 'em in the oven.They don't really taste like french fries...but they do taste really good.

I say bake the fries, but you don't technically need a thermometer. The fries will fry if the oil is hot enough and will just sit there if it isn't.However, I don't think the fire department will have to get involved, more likely the hospital. I think there is a higher probability of burning yourself than setting the house on fire.
Just go to Wendy's they have super tasty fries.

I agree bake them- again though my mom always fried them. I dont know how she did it with out burning down the house!

I agree with baking the fries however.....you can fry them in a normal frying pan on the stove. you def dont need 4 inches of oil ! I have made them this way plenty of times. Just pour some oil in a frying pan as if you were going to fry chicken cutlets or anything else.... just keep an eye on it and you will be good !

thanks for all the safe and helpful input ladies!!!i bake sweet potato fries like once a week so i reeeeeally wanted to actually fry them but, with all of your helpful and loving advice, i decided against it!
we actually got a call from some friends that they're gonna be in our neighborhood for a bit so we're going to meet them for a few drinks....so dinner was postponed until sunday night!

may i just say, that i nearly burned my finger off because I wasn't paying attention, I burned my finger 2 weeks before christmas making donuts in the oil. so bad, it was a 2nd degree burn and i had infection, the whole nine yards. its healed, but the tip of my middle finger is pinker than the rest of my fingers.perhaps you'll pay better attention that me...but....cooking with that much oil will never happen in my house, that's for sure.

wow. 2nd degree burns are super serious - as you very well know.i service the critical care burn unit at all of my hospitals so once i started to have fleeting images of the hyberbaric chambers i decided to order a pizza instead.
