eggplant parm

anyone have any good recipes???? think i wanna make it one night.

mmmmm a personal fave! I usually wing it....

I'll slice the eggplant kinda thin and drench with olive oil...then I'll coat with flour and brown in a fry pan....Lay it out and layer it up in a casserole dish...drench with sauce and mozz chesse and bake until the cheese gets all melty and delish!

It always comes out really nice from baking! I just brown the eggplant beforehand to ensure that it is soft after baking but you could def just skip the pan sear part!

I also use part skim mozz from trader joes and it tastes really good!
