spin-off to my gnochhi post

so i made a lot last night and had a lot of dough. i didnt want to roll it all into little gnocchi balls....so what did i do???

took the 'leftover' dough, put it in a greased pan, and popped it in the oven to bake at 400'

took it out, cut it up, threw on some salsa and a bit of sour cream

its kind of like a potato pancake....but with gnochhi dough!

just had it for lunch. DELISH!! and sooo different than the classic gnocchi w sauce

i doubled this recipe, so i had a lot leftover, then i randomly added the 'extras' below

peel and boil 2 potatoes until soft, but still firm. mash them. should be about 1 cup.

mix with 1 egg and 2 cups of flour till dough-like consistency

then take balls of dough and roll it into 'snakes' then cut pieces so they are about 1/2 inch each.

put those in boiling water for about 3-5 minutes. they will float to the top when they are done.



....so i doubled this recipe, and the dough still didnt feel 'right' so i added.....

splash of club soda - covered the dough with it, but just w a splash
about 1/2 cup fat free greek yogurt
garlic powder - just sprinkle all over dough.


the whole process - once the potatoes were boiled took about an hour. but the potatoes took a while, so i was in the kitchen for longer than that!!

honestly - the gnocchii was GOOD! yummm. i put tomato sauce with sauteed eggplant on top. yum

the leftovers i just 'baked'....it was cool to get two different meals out of the same dough. but i want the gnocchii! lol
