I make an easy pasta with grilled chicken (either on the bbq or in the pan), and sauteed garlic, olive oil and broccoli. My FH doesn't 'love' pasta, but I could eat it every day.Another easy one is get chicken drumsticks/wings and bbq sauce and just throw them on the grill.

Breaded Chicken cutletsThin chicken breasts, marinate in worcheshire sauce for chicken, salt/pepper for an hour in ziploc
Beat one egg add tbsp of water, put seasoned breadcrumbs in a large ziploc baggie. Heat a non-stick frying pan with extra virgin olive oil (EVOO). You can oven fry it, but it's not as crispy.
Dip chicken in egg, then in shake it up in the breadcrumb bag. Place in pan and cook each side until browned.
You can change a few things make it different
* Chicken Parmesan - add parmesan cheese to the breadcrumbs and top with marinara sauce and mozzarella cheese (sometimes I leave off the sauce and mozzarella)
* Cajun fried chicken - add cajun seasonings and/or cayenne pepper to the breadcrumbs
* Stuffed Feta and Spinach Chicken - Before dipping chicken in egg, sautee spinach in EVOO and onions. After spinach is cooked add some feta to spinach and add a spoonful to center of cutlet. Roll cutlet and use a toothpick to hold it together. Dip in egg and breadcrumbs

Someone gave this to me once
Chicken breasts
wrap them around cheese (swiss or something comparible) with a piece of brocolli
put in a pan with chicken broth
sprinkle with S & P and paprika
Bake at 350 for 30 mins
So I made this one. YUMMY.
