Re: Meatloaf Recipe?
A really easy way to make it is mix ground beef, egg and stove top stuffing. Back until done.

I made this one.. Its from Tyler's Ultimate on the food network, and it is delicious.click here
Dad's Meatloaf with Tomato Relish
Tomato Relish:
* Extra-virgin olive oil
* 1 onion, finely diced
* 2 garlic cloves, minced
* 2 bay leaves
* 2 red bell peppers, cored, seeded, and finely diced
* 2 tomatoes, halved, seeded, and finely diced
* 1/4 cup chopped fresh flat-leaf parsley
* 1 (12-ounce) bottle ketchup
* 1 tablespoon Worcestershire sauce
* Sea salt and freshly ground black pepper
Meatloaf:
* 3 slices white bread, crusts removed, torn into chunks by hand
* 1/4 cup whole milk
* 1 1/2 pounds ground beef
* 1 pound ground pork
* 2 eggs
* Leaves from 2 fresh thyme sprigs
* Salt and freshly ground black pepper
* 3 to 4 bacon slices
Directions
Preheat the oven to 350 degrees F.
Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small 'hamburger' patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

Re: Meatloaf Recipe?
I found this on William Sonoma website. I am going to attempt this tonight.Meat loaf is best when made from freshly ground meat. You can grind it yourself using an electric or hand-cranked meat grinder, or ask your butcher to grind the meat fresh for you. If ground veal is not available, use more pork or beef.
Ingredients:
1 Tbs. olive oil
1 yellow onion, chopped
2 celery stalks, finely chopped
1 garlic clove, minced
3 or 4 slices white bread
1/4 cup milk
1 lb. ground beef chuck
1/2 lb. ground pork shoulder or butt
1/2 lb. ground veal shoulder or leg
8 oz. tomato sauce
1 egg, lightly beaten
Salt and freshly ground pepper, to taste
1/4 cup ketchup
Directions:
Position a rack in the center of an oven and preheat to 350º F.
In a large fry pan over medium-high heat, warm the oil. When the oil is hot, add the onion, celery and garlic and sauté, stirring occasionally, until tender and translucent, 6 to 8 minutes. Set aside.
Tear the bread slices into small pieces, transfer to a food processor and pulverize the bread into crumbs. In a large mixing bowl, combine the bread crumbs and milk, stir until blended and let stand for 2 to 3 minutes.
Add the onion-celery mixture to the bread mixture and stir until blended. Add the beef, pork, veal, tomato sauce, egg, salt and pepper and fold together gently until blended. Transfer the mixture to a 2 1/2-lb. loaf pan and, using your hands, shape the mixture into an oblong loaf. Spread the ketchup evenly over the top. Bake until an instant-read thermometer inserted into the center of the meat loaf registers 165ºF, about 1 1/2 hours. Serves 4 to 6.

Re: Meatloaf Recipe?
I Love this recipe! I make it with turkey burger meat and I mix the brown sugar and ketchup and pour over the entire thing :)1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
Bake in preheated oven for 1 hour or until juices are clear.
