Help needed...I am out of state

My fiancé and I are planning TWO WEDDINGS. I currently live in Ga and he is currently in LI We plan to have a southern wedding in the mountains, and a northern wedding a week later on the beach on LI. We are very flexible with the date/time. We've both been married before, so we are looking for super simple, inexpensive, no bells and whistles. Probably 40 people....no more than that. I am entertaining anything from a beer/wine Hors D'Oeuvres, to a luncheon, to a dinner. Really unsure, and the cost will make the determination. Because I have limited time when I go back to NY, I am asking for opinions here and I will visit those venues I think might fit the bill. If you can help me out. I would greatly appreciate it,
