Easy Chicken Pesto Alfredo
Here's another recipe I use for the last minute/quick meal:2 chicken cutlets pounded flat rinsed with water to allow flour to stick
Flour (enough to coat the chicken) seasoned with salt, pepper, italian seasoning, basil, and parsley.
Pan fry chicken in a couple of tablespoons of olive oil on each side until browned. Add mushrooms (fresh and either the white or the portabella are good) and minced garlic. Again add to your taste and what you like, I happen to like a lot of garlic.
To stop the garlic from browning/burning add a couple of tablespoons of white wine. Cover pan and allow to cook for about 20 minutes or so until chicken is well done. Make sure to check to make sure wine hasn't completely cooked off and add more if necessary.While chicken is cooking boil water for either angel hair or fetticuine pasta. Cook as per package and drain.
I then take a packet of Knorr Alfredo Sauce and cook per the package directions. I add in a couple of tablespoons of pesto from the jar and allow to cook. I add more seasoning and even a little red pepper for a little bit of a kick.
I place the chicken with mushrooms on the dish with the pasta on the side. I then pour the sauce over the pasta and chicken and top with fresh parmesan cheese.
To be honest, I love the flavor of white wine and will usually stir a little in with the pesto while cooking the alfredo sauce to thin it a little and give a slight wine taste.

I do too. I was actually surprised at the quality of the sauces they have. My other favorite is the Parma Rosa ( I think that is what it is called.) That you could also substitute in the recipe.

Parma Rosa is my favorite!! I was thinking of getting some for tomorrow night actually
