Anyone have anything for quick easy spinach?

Anyone have anything for quick easy spinach?
All of my recipes for spinach require more work than Id like to give some nights..but I love spinach..does anyone have anything QUICK and easy..like a good sauce for tehspinach or anything like that??? TIA!!

you can saute it in garlic & oil and a little salt & pepper

I microwave the spinach, add some feta cheese ( optional) and boil some tortollini(sp?) mix it all together..takes about 15 minutes!

I have a quick and easy lunch with spinach.All you need is
- leftover chicken
- healthy bunch of ready to eat spinach (I use the ones in a bag)
- reduced fat feta cheese, crumbled
- Whole Wheat pita bread
Cut up chicken into small pieces. Put chicken, spinach and feta cheese in a small tupaware container and go. When ready to eat lunch heat container in the microwave for 2min and stuff it into a whole wheat pita.
It's very filling, easy and healthy!

I do this too, but I also like adding finely chopped opnions and 1/2 tsp of lemon zest to give it a nice kick.

I do something like this... I'll brown the chopped garlic in oil and just throw it over a bowl of fresh spinach (from a bag). This way the spinach is warm and wilted but not soft and mushy. I don't like mushy spinach.

Don't let the length of the recipe scare you!! I got it from Rachel Ray's 30 minute meals!! I swear it takes like 10 minutes to make!!! We LOVE it!!Spinach Salad:
6 slices pancetta, chopped
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 small shallot, finely chopped
2 teaspoons sugar
2 tablespoons balsamic vinegar, eyeball it
1 bunch, about 10 ounces flat-leaf spinach
Salt and pepper
In a skillet over medium high heat and add the pancetta. Brown the pancetta bits, about 2 or 3 minutes, then transfer to paper towels to drain and return pan to heat, reducing heat to medium. Add oil and shallots to the pan and let the shallots saute 2 minutes.
To the sauteed shallots for the spinach salad, add sugar and cook sugar with shallots 1 minute. Add vinegar to the pan, scraping up pan drippings. Add spinach to the dressing and turn to wilt and coat it evenly in sweet vinaigrette. Add crisp pancetta to the salad.

A friend of mine used to saute the spinach in garlic and a little bit of oil, then add a can of clams and some white wine, serve over spaghetti. It's delicious!!Welcome New Vendors
