Photo/video question

So I am in the process of working through photo and video vendors. It is a sumpremely important choice to me -- I really want to find someone we like who is also artistically strong. What I am wondering about is how they can capture all of the ceremony details without being too intrusive. Where we will marry, there is a platform that is slightly raised above the level where the guests are seated. There are several options for setaing guests, they can be 360 around us like at a planetaium or in a straight section like normally. Anyway, how do you have photo and video catching all of the detail without either 1. blocking someone's view or 2. just generally being in the way? How are you all handling this.
P.S. When I bring this up with prosepctive vendors I am told just well we are as onobtrusive as possible -- I just don't know what that means
