Need ideas for Christmas eve dinner

Need ideas for Christmas eve dinner

Help me please. Danielle and I are doing Christmas eve this year and we had planned on making a Cold Antipasti, Getting some shrimp cocktail, making a big salad, sweet potato pie, rice, and veggies and a Spiral Ham....But her mom decided she wants to make the ham christmas day. She gave us a pork roast to make christmas day....Now the problem is Danielle and I arent big fans of the pork roast and we cannot think of what else to make.

If we end up making the pork roast, Does anyone have any good recipes?

We're having a stuffed pork for dinner and I'm just putting sauerkraut (sp?) in with the pork.

Our other sides are corn/broccoli, mashed potatoes and applesauce

I like pork roast! I put BBQ sauce on the outside when 1/2 way through cooking. DH hates pork so I only eat it at my Mom's now. Hmm...What about a turkey? That's pretty easy, or a chicken? Or a roast beef? I think my mom is doing a roast beef xmas day, and they are pretty easy.

I would make a roast beef or maybe chicken cutlets.

Well we decided to make the Pork Roast anyway...I am going to make sweet potatoe Pie, and this yummy mushroom, onion rice that I make. We will also make a big salad with oil vinegar, and crumbled gorgonzola cheese. Do you think this will be enough food for 8 people?

I would make some vegetables also...maybe mushrooms or asparagus...peas? carrots? Gravy for the pork?

Also probably a good idea to have that applesauce on hand.

I might make one more vegatable, something plain, like steamed broccoli.

Is sweet potato pie a side, or a dessert?

The onion mushrrom rice sounds yummy, my husband would hate it, but I love all 3 of those things!

The sweet potato pie is for dinner. We are making pork gravy, and I forgot Danielle's sister is making green bean casserrole
