Is this enough food for dinner tomorrow?

Hi everyone!
I'm so excited, not only is Christmas only two days away now, but tomorrow is my BIRTHDAY TOO!!!!! I love it bc my mom and little sis come from NJ to spend the day with me and along with them, my other sis and her husband come over and we have a really nice dinner/dessert and open our Christmas presents to each other that night.

My mom refuses to let me cook on my b-day though, so she's making a HUGE tray of her super-yummy lasagna for dinner. In addition to the lasagna, we'll have cheese & crackers for pre-dinner snacking, then Craig and I are making Chicken with Pecan dressing in the Crock Pot. We'll also have bread, a big salad, and I'm thinking I'll just whip up a special dish of my Spinach with Feta Cheese & Chick Peas as another side dish, since it's super easy and takes minutes to heat up in the microwave. Oh, for dessert Craig is getting me a birthday cake from Cold Stone Creamery and my mom is also bringing homemade Snowy Cookies (Dutch chocolate mint chip!) and a mint chocolate cheesecake.

I'm just concerned that we aren't having enough food. We'll be 6 for dinner, this should be enough right? How does it sound to you guys? THANKS!

It sounds like a ton of food...but, ever the overcompensator, I would also add a starch - potato? rice? I know you ahve the pasta, but I would treat that as an entire separate course from the chicken...or am I just crazy??

No prob! It's actually so easy that I feel kinda bad calling it 'special' I don't use any specific measurements either, so this is a very unorthodox recipe

I just take frozen spinach and pop it in the microwave - about halfway through drain slightly, leaving some liquid, add the feta cheese, (I use about 1/2 but you can play around with this amount depending on your own taste), and half a can of chick peas. Finish cooking in microwave, add oregano, seasoned salt, and crushed black pepper. Stir to mix everything together and melt the feta cheese.

It's really yummy if you like spinach - Craig LOVES it and this is the only way I can get him to eat his greens, that meat and potato husband of mine! Enjoy!

oh, good idea Farah! I treat chicken and pasta as separate courses too, so I'll make some rice to eat w/ the chicken. Thanks sweetie!!
