Pork Cutlets?
What can I do with these? My Dh took them out of the freezer for tomorrows dinner. I don't want to bread them and fry them - (we are trying to eat low fat) Does anyone have a low fat recipe for them?

Slice 'em & dice 'em, and saute with some veggies.
Marinade them in your favorite salad dressing .. we like Just 2 Good Italian .. or Red Wine Vinegrette .. then bake.
Instead of frying them .. you can dip them in Just 2 Good Italian dressing .. dip into your favorite breading mixture .. then bake.

Anybody else have any suggestions? I usually make Shake & Bake, but since I'm working nights, I need something that will reheat well for DH- so nothing with breadcrumbs.

i cook them up with some saurkraut and serve with mashed potatoes and apple sauce.....i think it's the german side of the family that serves pork like that....but it's really yummy!

This may be too late, but we usually drizzle with olive oil, add salt, pepper, oregano, then throw some sliced garlic in the pan, squeeze some lemon juice over and bake in the oven.

Okay, so I made them last night - and they actually came out pretty darn tasty! I basted them with zesty honey mustart (goldens brand), I seared them so it would get inside them. Then I shook on some Mrs. Dash, the tomato garlic one, and put them in a frying pan - I don't use any oil, on low/medium, and cooked them about 10-15 minutes on each side, they came out really yummy, my DH was very impressed. (Did I mention that I don't cook?) I made the goya yellow rice for a side and a salad. Voila!

You can make a teriyaki like marinade for them. Put them in a ziploc baggie, add some low sodium soy sauce, some honey, a little bit of garlic, and slices of fresh ginger. let it marinade overnight. I usually barbecue mine like that, but they taste good baked in the oven as well.
