The Tropicana now has a great 'wing' called The Quarter - it's very 'las vegas' styled in that it's a mall w/a theme and they have some amazing restaurants! Definitely hit up 'Cuba Libre' for some awesome food and drinks....I also suggest hitting up the Cazbah in Taj or Mixx in Borgata - they're clubs with mixed music and a mixed crowd.

ditto on the casbar at the taj - we went for a bacholorette party and had a blast. the girls went to the club and the guys hung out in the poker room. if you're there during the day maybe you can get a spa treatment.

I second the Trop...stayed in the The Quarter last feb...and it was awesome...they have great manhatten restaurants...We ate in the Palm, great food but a bit stuffy..and there is Carmines which is great for groups...Cuba Libre was really packed the weekend we went..lots of dancing and great music..but we had to leave because our friend was prego and it was smoky in the bar area.
The borgata is supposed to be great but very $$$$ If I were you, I would stay at the trop and then take a cab over to the borgata (club there)...and if you do stay at the trop make sure you request the quarter, or they will put you in the older section....
Oh..and one more thing...there is great shopping in the Quarter...designer stores etc... and a SPA!!!
