I have a written list of specific things I want from them. Such as, place rose petals on cake table, place card box on favor table etc. Make sure to give them details!

OMG!! I had mine tonight!! Just got home. I met with Jose, nice guy. We went over the vendors I am having, what our Estimated time of arrival to the hall will be, the # in our bridal party, then we went over the menu choices, the balance (which is only $988 for us!!) gave me place cards, a floor plan, the guest list (they have a pre-printed list that you put the guests names at each table), and and introduction list, just like the DJ gets. Oh and cake! Yum! It was about 30 min. I didn't have any questions, he covered everything. I am sure I am forgetting stuff. We have a BIG issue that we are VERY likely not going to meet our minimum, but he said we'd discuss that w/ our maitre d, when we go in 10 days before. Oh he also asks about favors (will they be on the table or will we hand then out), cae topper, cake knife/server, toasting flutes, guest book, etc, etc. OMG!! It seems like a lot, but it went well!
