baked chick breast with pic!

Serves 2

Chicken Breasts - Easy recipe!
1 pound chicken breasts, skinned (approximately 8 oz. per person)
2 tablespoons butter, melted
1 cup potato chips, crushed
1/4 teaspoon garlic salt
black pepper
2 sprigs parsley for garnish (optional)
approximately 20 pencil asparagus spears cut in half (10 per person) for garnish, (optional)

Preheat the oven to 375° F. degrees. Dip chicken in butter, roll in potato chips, garlic salt and pepper. Grease jellyroll pan and bake 25 to 45 minutes or until juices run clear, do not turn the chicken. They can be baked earlier and reheated. Cut asparagus in half, cook, toss with butter, salt and pepper.

Put 10 asparagus halves on each plate grid style, add chicken on top. Invert yam soufflé on plate, add zucchini and serve the baked chicken breasts...... such an easy meal to prepare and delicious!

Yam Souffle Ingredients - Easy recipe!
2 - 1/3 cup ramekins
1 small yam (approximately 10 ounces), peeled, cut into chunks
Milk, very small amount
1 tablespoon butter
Kosher salt, to taste
black pepper
2 teaspoons parsley, chopped
2 tablespoons onion (white or green), chopped finely
1 egg, beaten, use only 1/4 of the beaten egg
2 parsley sprigs for garnish

Preheat oven to 375° F. degrees. Butter ramekins. Cook yams until soft, mash with milk, butter, salt, pepper, parsley, onion and 1/4 beaten egg. Fill ramekins, bake 15 minutes or until a knife inserted in the center comes out clean.... these are delicious!!! They can be prepared ahead of time and reheated just before serving.

Zucchini Ingredients - Easy to prepare!
1/2 pound green zucchini, diced fine
1 tablespoon butter
Kosher salt, to taste
freshly cracked black pepper, to taste
1/4 teaspoon dried dill weed

Sauté zucchini with butter, salt and pepper just a few minutes, they should be crunchy. Add dill weed and serve. They are delicious!

Wine recommendation: Chardonnay
