What do you want to make? Chicken, pasta, steak, fish? I cook every night and I never make it a huge ordeal. If it takes more than 30 minutes, that's too much!

Re: Any ideas on whipping up a quick, easy dinner?
How about lemon chicken with pasta? After cleaning chicken cutlets (while they're still kind of wet) I dredge them in a little flour with salt and pepper. Cook in a pan with a little olive oil until they're all the way cooked through and then take out. Add some white wine to deglaze the pan, lemon juice, chicken stock and a little flour to thicken it. When it's thick enough, put the chicken back in with some lemon slices (I like to put capers too) then serve the whole thing over pasta with italian parsley over the top. I feel like this always has a simple wow factor to it.

How about a stuffed chicken cutlet? I put mozzerella and a little ricotta inside a chicken cutlet that I've split almost all the way through. Then close it with a few tooth picks, bread it in egg then breadcrumbs with parm cheese and then fry it in a little oil. I usually finish it in the oven because thick cutlets take a long time. Don't forget to take out the toothpicks!

Re: Any ideas on whipping up a quick, easy dinner?
My fave and easiest are chicken cutlets. coat in beaten eggs then in bread crumbs. throw in the oven for about 25-30 min (dont forget to turn over) and add your favorite: rice, pasta, or potato.

Re: Any ideas on whipping up a quick, easy dinner?
make chicken cutlets and then make a quick wine sauce - melt some butter in the pan, add a little flour and whisk it up. Then add white wine and let the wine simmer a bit, add chicken broth and let that cook on a low heat. Take the cutlets that are breaded and fried and put carmelized onions and either roasted red peppers or sun dried tomatoes on top then a slice of mozzarella. Bake it in the over and serve with wine sauce. I know it may sound complicated but it's not and if you don't want to have to cook the chicken buy pre breaded chicken cutlets and just cook them up!

Re: Any ideas on whipping up a quick, easy dinner?
My boyfriend absolute favorite is a recipe that I used to use when I worked for the pampered chef... I did it for the buyers so it only takes like, maybe 20 minutes to prepare and TRUST ME so good...
Chicken Wreath
1/2 C. red bell pepper, chopped 1/2 C. broccoli, chopped 1/4 C. water chestnuts, drained and chopped 2 T. onion, chopped 6 oz. cooked chicken breast, chopped 2/3 C. cream of chicken soup 1 C. (4 oz) shredded Cheddar cheese 2 (8 oz.) pkg. refrigerated crescent rolls
Preheat oven to 350ºF.
Chop pepper, broccoli, water chestnuts, onion and chicken. Combine all ingredients except crescent rolls in medium bowl.
Unroll crescent rolls and arrange triangles in a circle on a 15" baking stone with the bases overlapping in center and points toward the outside. Scoop filling mixture onto widest portion of each triangle. Fold points of triangle over filling and tuck under base at center. (Filling will not be completely covered.) Bake 25-30 minutes or until golden brown. Cut into wedges and serve warm.
