Making my 1st Crockpot recipe and I think its going to be disaster. UPDATE on bottom.

Ok, I did everything that they called for except I didn't use beans and I used onion gravy mix (couldn't find the soup mix). My crockpot instructions say if a recipe calls for medium time, you can cook 1/2 the time on high, so thats what I'm doing and Its already cooking almost 3.5 hrs and the carrots and potatoes are not soft. I just warned DH that its not ready and he should go get pizza, but he wants to wait.

SLOW COOKER EASY BEEF STEW
1 lb pkg. carrots
2 lbs beef stew meat
2 tsp. salt
12 potatoes, peeled and cut in 1' pieces
2 cans green beans, drained
2 cans peas, drained
2 cans corn
1/2 cup onions, minced
2 pkgs. onion soup mix
water, as desired
Place all ingredients, in order listed into slow cooker and cover with room temperature water.
Turn to high setting for 1 hour, then medium 4-5 hours or until carrots are tender.

It doesn't sounds like you did anything wrong.
It says 4-5 OR Until Carrots are tender.....maybe the carrots will start to get softer.

I would wait to see.

I am sure the carrots an potatoes will get tender soon, 4-5 hours is quite a while, but I am sure that 2 1/2 on high, they will be fine, just wait and see, good luck

Take your time and dont worry-when we do stew its the same way, its takes awhile for everything to get tender and soft.

Re: Making my 1st Crockpot recipe and I think its going to be disaster.

you should be fine -- it does just take time. I always find it easier to do a crockpot meal when I'm at work and not at home otherwise I keep checking up on it too much.

I am going to try a stew this wek in the crockpot -- but always loved when my mom would make it in a pressure cooker better because everything gets really tender in them versus the crockpot.

Let us know how it turns out!! Hoping it's yummy

Can I freeze some in a regular rubbermaid container? Just asking, cause I never freeze cooked food and there is extra even w/left overs.

Definitely!! Whenever I make a huge pot of chili I always freeze the extra in individual portion sizes in Rubbermaids/Gladwares so I can always take it out of the freezer the night before and have something to take to work for lunch the next day.
