I made the most killer waldorf chicken salad today!

I am very proud of myself! I hosted a little brunch for me and DH, and my best friend (moh) and her hubs..

anyway here's whatI threw in the bowl (I didn't really measure I just guaged it as I went):

Canned white meat chicken (98% fat free)-drain and rinse off in strainer (to get all that yucky water out that it was packed with in the can)
chopped celery
chopped granny smith apple
chopped red seedless grapes
golden raisins
chopped walnuts
squeeze half fresh lemon (keeps apples from turning color)

Then in another bowl:
miracle whip
1 spoonful brown sugar
a little cinnamon
squeeze 1 1/2 lemons

then mix all 'dressing components' and combine into bowl with the rest of the ingredients.

DH and I aren't big mayo people so we didn't put too much of the 'dressing' on it.

Ladies I kid you not, it was SOOOO TASTY and best of all, it's super healthy, packed with vitamins, and yummy! We put the chicken salad in whole wheat pita pockets.

And the best part-I made SO MUCH that DH and I have enough extra that we each have our lunches for the next 2 days ready to go.

Delicious! That sounds just like a recipe they served at a pampered chef party i went to! Yum!

OMG Lauren its so light and amazing!! It will be definitely move into my rotating menu of fitness friendly meals.
